This is cocktail we’re going to make is called the 21 Hayes. The 21 Hayes was created by my partner in the art of the bar, Rob Schwartz. This is a cocktail that he created that was dedicated to the Muni line that runs past absent the 21 Hayes. But it’s the combination of cucumber, Pimm’s, little simple syrup, fresh lemon juice and, gin. Let’s all shake in and strain. And then we garnish it with the fresh cucumber and a cocktail that’s in.
So for the 21 Hayes, I have a few slices of fresh cucumber in here. It’s about one inch piece of cucumber. Then add in about a half of ounce of Pimm’s, and just a couple of ice cubes. So I can get some -- when I got to model this. And this, I want to mash it up. Pick a nice pulp out of the cucumber. I’m going to squeeze in some fresh lemon juice, juice of a half of lemon, a little bit of simple syrup, shot of gin, and shake the whole thing up.
And with this cocktail, like keep from having too many pieces of cucumber in the drink. So we’re just going to strain it through tea strainer. And finish it off with cucumber and a cocktail onion. Here we have the 21 Hayes.
