4th of July Fruit Pizza Recipe

Hi I’m Betty. Welcome to Betty’s Kitchen. Today we’re doing a raspberry-blackberry
fruit pizza and I have done a lot of things recently for you that have strawberries and
blueberries for 4th of July and I consider that this is kind of the same color skim because
we might have some white frosting in this as well so I think I bet it’s red, white and blue.
The blue is just a little bluer than the usual because it comes from blackberries instead of
blueberries and our red is maybe a little different being raspberries instead of strawberries
but you do have the parfait that I uploaded and also we have the truffle.
In addition to that there was a fruit salad with strawberries and blue berries and I added
some pineapple so that had a little bit of color that was not red, white and blue but you
might want to use it depending on the taste of your family. For this fruit pizza we’ll do
the crust. So we’re going to use some ready made cookie dough. This is Pillsbury brand
of sugar cookies so you just by it in a refrigerated tube like this and then all you have to
do is slice it in ½ inch slices and place them around this plate. The plate is similar to this.
This happens to be a glass pizza dish if you don’t have one of these just try to put them in
a circle and you could cook this on a baking pan, cookie sheet or something like that.
So let me get these cut and I’ll back with you. You could see I covered my dish with
these circles of cookie dough and I have been working it with my hands trying to get it
evened out and spread not all the way to the edge but pretty close to the edge. I’m leaving
a little room if it grows in the oven a little bit then it needs a little bit of space and I do
expect that it will rise so let me work just a little bit more and get this ready it will go into
a 350 degree oven for 10 to 12 minutes and then it will be a nice big cookie that we can
use for the crust of our pizza so I’ll show you that when it comes out of the oven.
Our fruit pizza crust is done and it took just about exactly 12 minutes for it to get this
condition and you can see that it’s nice and crusty and it’s ready to come out carefully
remove from the oven and then have a place ready for it where it can cool. It’s going to
cool until it can be spread with a topping and then fruit will be on top of that so we’ll just
come back when we’re ready to work with.
So our crust for our fruit pizza is all cool. Actually, I put it in the refrigerator after it
cooled initially a little bit and it’s quite cold so that makes it easy to work with if you
have something that’s warm and then you plan to put a spread on top of it and maybe
some fruit on top of that it’s not going to work very well. So we need to have it cooled
and if you want it cold and you may spread on whatever you like for a topping but since
this is sweet we’re going to put some fruit on it. I think just icing is good.
This is vanilla and it’s also a reduced sugar. You’re going to spread it just like it. It’s
pizza sauce on top of this pizza crust so give me a minute I’ll have it spread then we’ll
put our fruit on it. Now we have our pizza crust all spread with our pizza sauce and you
don’t have to be very particular about how you get this on there, you just need it on there
because it’s going to get covered up anyway with fruit. So the next step is to put our fruit
on while I have here are blackberries and raspberries and I got 1 pint of blackberries and I
had 2 pints of raspberries. I washed them and they’ve been draining and drying for
actually a couple of hours on this paper towel so they’re very dry and you don’t want to
bring drippy stuff over here on to this.
What you’re going to do is to start placing the one there might be fewer off in the center.
Start placing these and you can just kind of throw them on and lump them if you want to
or you can make them look pretty nice. If you have to shift them around their going to
have white from the icing on them so be pretty careful as you place them. Give me a little
bit of time and I will go ahead and place these and then come back and show you our
completed dessert.
I used exactly all of our blackberries and our raspberries so that was one kind of
blackberries and 2 pints of raspberries to do this coverage and we have a very nice
looking patriotic dessert and it’s something a little different from the strawberry-
blueberry combination so if you’re interested in trying something all different for your 4th
