Hi, I am Vicki Rosenthal and I am 50 years old and I have been vegetarian for at least 12 years but I have been raw vegan for two in a half years. And the reason I went raw vegan was because originally for health reasons and I was frustrated with my weight. What started the process is I ran into a friend who started explaining the health benefits of being raw and then I went to the Optimum Health Institute in San Diego and after only being there a week I noticed how much better I felt. And I wanted to continue feeling better so that is what started the process for me.
Since being vegetarian, I noticed one of the things that struck me the most is when I brush my teeth my gums do not bleed anymore and I also noticed my skin cleared up incredibly. I have people constantly commenting on my clear skin which is amazing because before I had a lot of acne and a lot of blotches on my face. I also have no longer have heart burn. I no longer have bloating and ulcerous type of irritation in my stomach. I had red bumps all over my skin, I mean all over my arms and legs that is gone. I know that my energy is better. I feel 20 years younger. My eyes are cleared up. My hair is thicker. My nails are clean and strong. I have incredible boundless energy like sometimes I felt like I am 15.
I eat a lot of salads, really that is my main thing that I eat is salads and I tend to eat a lot of darker greens. Also every morning I have a green smoothie. Sometimes I have a raw chocolate smoothie. I do not worry about the protein that is the common questions that people ask me which is amazing because I feel that we are lead to believe that we need all these protein when in fact it is interesting because the best source of amino acid is in your green leafy vegetables. And protein does not turn to protein in the body, amino acid turn to protein in the body. So, I was always concern about getting all these protein but in fact too much protein can actually be harmful and when I was briefly on a high protein diet I did not feel good. So now I feel like I am protein deprived at all.
I also want to say that this pathway is far easier than I ever could have dreamed in a million years and I truly believe that if I can do it anyone can do it.
