Almond Lace Cookies
In Italy, florentines are Christmas classic straight from Tuscany. These almond lace cookies are nutty, lacy and crisp. And their chocolate drizzle finished is a sweet tooth decorators dream.
Once you made the dough from the recipe provided, it's time to decorate. Start with two to four ounces of semisweet chocolate chopped and a medium heat of bowl. Bring your saucepan filled with one inch or so of water to a very slow simmer. Then place the chocolate over the simmering water. Be sure the bowl doesn’t touch the water. Stir the chocolate occasionally until it’s melted and smooth.
Next, dip a spoon into the melted chocolate. Drop about half of teaspoon of chocolate onto the flat side of an already made cookie. Press it together with another cookie just like you would a sandwich. Place it on a rack to let the chocolate set.
For another option, try your chocolate design. Cool your cookies on a rack and have chocolate melted in a bowl. Dip a spoon into the chocolate and drizzle over the Florentines for an elegant yet fun touch.
Set the cookies aside at room temperature until the chocolate is set. And enjoy this classic Italian treat, almond lace cookies, Florentines.
