Ambrosia Delight Salad Recipe bettyskitchen Hi I’m Betty. Welcome to Betty’s Kitchen. Today I’m responding to a request and that request was for Ambrosia. There are a million recipes for Ambrosia that the lady did say that she had had some that had fruit cocktail and it had mandarin oranges. So I just put a few things together and I use part of my recipe and worked in the fruit cocktail and mandarin oranges so see if you like this. We’ll start with a large bowl and that will be because we have to make some things that get kind of messy. We’re going to be using some sour cream that’s just to give it a little bite because everything in here it has a fruit taste or else it is a sweet taste so this is just going to just sharpen it up a little bit and give a little bit of interest to the sauce that I’m making. The next thing that we have and by the way that was ½ cup of sour cream and I did use fat free, you can use regular or fat free. Next thing is whipped topping. This is an 8 ounce container and you buy this in the frozen food section but you need to thaw it out because you’re going to have to work it in so this is thawed and what I plan to do is combine it with the ½ cup of sour cream so all 8 ounces get put in here. This is just a generic brand and it also it’s not low in fat or low in calories. Just make your own choice on that and you’re free to make the calorie count a little lighter if you choose but I just had regular so these two. I’m going to take a larger spoon and mix together. Very simple dressing here but that’s where you want to start because it would be difficult for you to get these mixed appropriately if you had started out adding some of your fruit. What we’ll do after we have this mixed to our satisfaction is to start adding some fruits that are typical of Ambrosia so there we go. It looks good. The first thing I have is a can of fruit cocktail and this is light that just heavily what I had. That means that it was packed in hair juice from concentrate and instead of being packed in heavy syrup which is often the case it is light for the reason that it was packed in pear juice so I’m just going to put that in and each one of these I will just dump it in and then we will get it all mixed together. I wanted to say the pear juice is here because this is drinkable and if you like to save it just put it in a glass when you drain it off and you put it in the refrigerator and when you feel like it has a pear juice. Next thing is mandarin oranges and both of these cans are 15 ounces this has been drained and I just got rid of the water that was in here. It’s packed in water so you don’t need to save any of that. Pour that in and let me run down to our cherries. I have a 16 ounce jar of cherries which I have drained and you can see my cherry juice right and this is quite precious because you can make cherry coke out of this. You can put it on top of banana split just drizzle a little bit along. It has a lot of good uses so it’s going to go in my refrigerator to come out later for some purpose and the cherries go in our mix. A couple more things before we do our blending I have some flake coconut here. This is a large bag. All you need is 1 cup of that so I’ve already taken another bag and measured that 1 cup of flaked coconut but it is very distinguishing quantity of Ambrosia and then I have some marshmallows that I have opened and I have emptied up 2 cups from this bag and we’ll be adding those. And you see this is quite a large salad but that’s the end of the line so we’ll start mixing it together. I’m going to move these. I got a little too much in the way and then you need this big bowl and a big spoon. It couldn’t really turn much with a spoon like that so you need to prepare or if you’re not shooting a video you can take your time and get the spoon you need but I have to kind of think what I’m going to need for this. Just get all of this blended together and it’s going to come out looking really pretty so again elegant salad or dessert for you to use at your table. You can use it for guests or you can just crawl up on the couch and have a nice bowl of this. It’s very comforting and when it looks about like that that’s pretty much what you’re going to do with it so in order to serve it you can use a large spoon like this. I think I’ll even go larger to have another spoon set out here and just dip it into— I would use a clear bowl. It didn’t have to be it’s just for looks if you have something that you want to display and have it look really pretty and have it visible from the outside as well as the top then if you have any clear bowls those are the things that are best for display really pretty salads and desserts so don’t crush it down too much. Leave it nice and fluffy like that and that’s what it’s going to look like. When you serve it individually again I would use a clear bowl something like this. This is called a berry bowl and you will just dip a little bit of this in a servings worth and try to get some of these fruit and if you don’t see any cherries in there then turn around until you get a cherry or two and a serving like that would be very nice so I’m going to dip in and get some fruit and some coconut and a marshmallow in there I think. Really good taste, you’ll like it.
