Anne Burrell's Gingerbread Cookies
Gingerbread cookies played a major role in my house as a kid at Christmas time and this is my recipe. So I have six cups of sifted all purpose flour, six tablespoons of baking powder, two teaspoons of cinnamon, half a teaspoon of ground cloves and quarter of teaspoon each of ground nutmeg and allspice, and of course a tablespoon of ginger. It is gingerbread, a pinch of pinch of salt. Let’s sit this guy altogether. This is making me think of my mom in Christmas time as a kid already. Dry ingredient is done. So I’m going to go ahead and combine all of my wet ingredients in my sauce pan, bring it to a simmer and then let it cool. Five tablespoons butter, one and three fourths cup sugar, three fourths cup honey, juice of two lemons, and the zest of one orange, and the zest of one lemon.
So my wet ingredients have been brought to a simmer. I cooled it down and I’m going to go ahead and add two eggs here, and then I’m going to combine them with my dry ingredients, and we’re going to go ahead and roll out that dough.
My dough it rolled out to the perfect half-inch thickness, so it’s time for cookie cutters. When I was a kid, my mom had hundreds of these. Different shapes and sizes, so today we’re going to use stars, and little gingerbread ladies. It’s just makes me think of Christmas and my mom. This is what we decorated our Christmas tree with. We don’t use ornaments, we just use cookies.
So I’m going to go ahead and put them on my tray. I’m going to bake these guys for 20 minutes at 350 degrees but I’m going to remember let’s poke a whole in them first. So we can string them up, and use them as ornaments. There we go. Okay, so when they come out of the oven, this is what they look like, and they’re ready to hang on my tree. These makes me think of Christmas in my house when I was a kid.
