Apple Fennel Cole Slaw
Billy Parisi: Thanks for stopping by FixMyRecipe.com. I am Chef Billy Parisi and our new fix goes to Jenny of Detrie Michigan, submitted the recipe for Coleslaw. I understand you are diabetic and looking for some alternatives, I’ve an awesome recipe that you are absolutely going to love. Jenny, this recipe is completely different than the ingredients that you used in yours, pay close attention we are going to prepare our vegetables and simply add everything together, sweet onion, some granny smith apples, Belgian endive and some fresh fennel and don’t forget to core it, and don’t forget to add in a little chopped parsley. Alright, all of our vegetables are together in their bowl. Now we need to make the dressings, it’s very simple, sour cream, little bit of red wine vinegar and some horseradish. Now we want to pour dressing right into our vegetables, don’t forget to season with salt and pepper, anyway we’re going to have to try this out. Jenny, that is so, so good and the great thing about it is you can put it on a sandwich, serve it with crab cakes, it’s very versatile, and more importantly extremely healthy.
