Our new fix goes to Chip of St. Louis, Missouri. He submitted the recipe for some duck he has no clue what to do with it. Likes hunting, likes ducks and geese, doesn’t know what to do, don’t worry Chip I have an awesome recipe that you’re going to love.
Chip, since I like ducks so much, I’ll probably dedicate some more recipes to you but for now I’m going to use the duck breast, do a little Asian infusion, lets go head first and score that duck breast skin, then we’re going to marinade it in some orange juice, garlic chili paste, and some fresh cilantro.
Chip, super simple marinade but you’re going to get a ton of flavors for it. Let’s go ahead and put a little plastic over it, heat it in the refrigerator. In the meantime, let’s get everything prepped up and ready to go to make this delicious sauce that going to cover this duck.
Chip everything has come together super nice in a super smoke and hot skillet, let’s go ahead and sere off this duck with a little bit of sesame oil. Chip, be sure to put skin side down on this duck, there’s so much flavor in that ducks skin. We want that to be completely caramelized and the great thing about duck is you can eat it about medium temperature.
Dear Lord, Chip does it get anymore beautiful than that? All right Chip once they are cooked to your desired temperature, let’s go ahead and set them aside then we’re going to finish this sauce right in the same exact pan.
We’re going to make sure we caramelized this garlic, fresh chopped ginger, and wonderful cut green scallions, we’re going right back to the burner. Once our vegetables are caramelized we’re going to add in a blend of red wine, red wine vinegar and soy sauce and let it reduced in half. Once it is reduced in half, Chip let’s go ahead and finish this bad bully off with a little whole butter.
Do I need an excuse Chip? This is unbelievable. That sauce finishes that wonderful marinated duck breast right off. Do this recipe.
