Hi, and welcome to Cajun Cooking TV. Tonight we are going to cook some Honey Glazed Bacon Wrapped Shrimps. So let's get started. Real quick, we have a dozen jumbo shrimp. These are from the Gulf of Mexico. We've already peeled them and, I am going to show you how to do that in just a second. I have a quarter-cup of lemon juice. I have a quarter-cup of orange juice, and I have a cup of light-brown sugar, we have some honey. I have some Smokehouse Bacon here, that doesn't have any nitrate to preserve this. We have got some olive oil spray. So let's just get started on our shrimp. I've peeled them all, but I kept one for you, and to peel the shrimp we -- in this demonstration, we want to keep the tail on for presentation.
So, I am just grabbing them by the legs and pull that off. It just comes right off, and then, it just kind of hold this to keep that section intact, just pull those legs off. So that's it and you also want to take the vein out. So just from the bottom all the way to the front just lightly slice into it like this. And as you can see, there is a little black vein in here, and you wanted to get as much of that out as you can.
You can always have a paper towel, when you need to whip that one. So first, I want to make the honey glaze, so I am going to add in the liquids. I have a sauce pan heating here. I have the lime juice, the orange juice. I am going to add the brown sugar, let that stir around. It dissolves right away, and then I want to pour in about quarter-cup, maybe a little more of honey.
This is a local honey we found at the fresh fruit stand. This is what we are going to use, once the shrimp have cooked, and we are going to use this to glaze over the shrimp. So, we'll let this simmer, then we are going to put together the bacon wrapped shrimp. We open up the bacon, and I took out four slices, I had 12 shrimps, so I took out four slices, cut them into thirds.
So I have just enough bacon pieces for each one, because you want about two or three inches a slice of bacon. So what we are doing is we are just going to take the bacon and wrap it around the middle, and secure it with a toothpick. Just one right down the middle will do it, just like that. I sprayed a pan and over here, a bacon sheet with some olive oil cooking spray, and I am just setting them down evenly on this sheet.
This is really simple, and a very elegant dish that will be impressive, if you company over. It's a great appetizer. We are going to have it for our main course. So very versatile, and certainly, going to be really tasty. So we have this here, got our glaze kind of simmering.
So I have all the shrimp here. We are going to broil these for three to four minutes, on each side. So after four minutes, I am going to flip them over, very carefully and then we are going to put the glaze over it. So let's get going on this. I am just flipping them over. It's already smelling really good, here in the kitchen.
I am just going to flip them over, you can see they have already curled and turned pink. So we are going to do another four to five minutes. Okay, now we are ready to put some of our glaze on the shrimp. We did really want to put it on, while they were cooking, because it would have just burned it -- not done right. It would've kind of crystallized, I guess.
So that little brush here, we did have a nice paint brush. So I am going to paint some of this glaze on here, on the each one, and then I am going to put it back in the broiler only for about a minute, otherwise these shrimp are done and we are about to eat.
We are all done, and I am ready to serve this up. I made some fresh potato salad today. So we have got that for our side item. You want to do about four shrimp for serving. These are really large shrimp. And I use the extra glaze here for dipping, and I want to tell you, you can just anything to use as the glaze, or the topping.
I even thought about olive oil, and Italian seasoning, and a little mix garlic. So don't worry about that, I actually came up with this honey glaze at the last minute. So it can be anything you like.
