Bahamas Mama
Hello, welcome to Common man Cocktails. I’m your host, Derrick Schommer and this week we’re going to do the Bahamas Mama. Now I found a lot of recipes for the Bahamas Mama. There’s nothing really consistent about any of them. They all have different types of ingredients. So what we’re going to do is we’re going to take the one that I think is the oldest and we’re going to see. Out of all the recipes we’ve tried, this one tasted the most unique, the most I guess, old school. It contains all these alcohols; it contains a little pineapple juice, a lot of pineapple juice.
So what we’re going to do is we’re going to do a quarter ounce of Kahlua. This is a Kahlua Especial. You can use any type of Kahlua or coffee liqueur that you have. This is just a thirty-five percent alcohol, seventy proofs. It’s the high test Kahlua. If you’re a big Kahlua drinker. I love Kahlua.
We’ve got some dark rum. We’re going to need a little of dark rum, very little, just a half an ounce. We’re going to use a half an ounce of coconut liqueur, or coconut rum. We chose rum because we’re Common Man Cocktails. This is what we have in our house. And with this, one out and we bought some 151 proof rum. That’s extreme.
We’re going to do four ounces of pineapple juice. We’ve got our cocktail shaker. We don’t have the Collins glass. If you happen to have the Collins glass, use that. Otherwise, I’m just going to use a highball glass because that’s what we have in stack. Basically, it’s what’s in the cabinet. Good enough right? So let’s get started. We’re going to put some of this stuff out of the way. Oh yeah, let’s finish with this. This is a freshly squeezed, one ounce, a little more maybe, worth of lemon juice. That’s the, not enough, it’s a secret ingredient but it’s the only other juice besides the pineapple juice so we need it. It sours it up. This sweetens it up. Mix it together and you got a party in your mouth.
Let’s get started. Let’s go with our shots. We’ll start with the Kahlua ‘coz it’s cool. We’re going to do a quarter ounce, just enough to hint at the taste of coffee, there, done.
We’re going to do a half ounce of dark rum. Good little color, a half ounce of the coconut. This is going to give it one of its great complex flavors. If you don’t like coconut, you’re going to kind of taste it. So you really got to get used to it or try something different and a half-ounce of 151 proof rum. Just crack it open never used it before. Yes, it can kill you. Nice, they have a nice little filter on there so that you don’t drink too much. This stuff will light on fire. It is flammable. Caution: flammable warning.
Four ounces of pineapple juice, one, two, three, four, it’s starting to fill up our little shaker here. And let’s just dump in all nice, sourly goodness of the lemon. Shake it up. A ten seconds shake. Since we didn’t bring any extra ice, we’re just going to pour it all right into this glass.
If you want to impress friends, give them a pretty iced glass and just strain it right in there. Kind of looks like a banana. Or it’s got a little darker than you’d expect but it does have the darker rum, it has the 151 so you’re going to get a small, dark, it’s got a little whitehead on it. That’s kind of cool. Kind of looks like a, looks like a blended drink. Smells like pineapple. That makes sense, its four ounces of pineapple in here. It’s kind of tropical. Just give it a try.
We aren’t tasting a lot of the dark rum. Actually, believe it or not, I’m not tasting a lot of that. I was actually expecting ‘coz we did this drink ahead of time. We test it without the 151 ‘coz we had to go out and buy it. I don’t really taste the difference. I wouldn’t thought, going with the higher alcohol, you’re going to get that burn? No burn, that’s just awesome.
Coconut, immediate coconut and pineapple, a lot of coconut after taste. So if you don’t like the coconut, might not be a drink for you. There’s a hint of coffee, a chocolaty coffee taste which adds a new complexity, I didn’t, that you don’t usually get in a drink like this. There’s very few tropical drinks I’ve seen that actually have Kahlua in them. Creamy, refreshing but not overdone, not too much alcohol, considering all the stuff we have in here. This is very tasty.
