Baja Style Fried Lobster Recipe Dan Hernandez: This week in the Galley we’re down here at the beautiful Rosarito Beach Resort in northern Baja, Mexico and standing next to me is Jorge. His family owns Vincent Restaurant and beautiful Rosarito and Jorge I've known you for a long time and thank you for coming down to help us and what is it you guys are going to do for us today? Jorge: We’re going to cook lobster the traditional way on this area which is raw lobster deep fried. Dan Hernandez: Now do we add in any lemon or lime to this or do we just go straight to deep fry? Jorge: You can just go straight. Some people want to put a little bit of flour on the top just to make it turn more like golden color but that’s—when the lobster is fresh when you begin with the very fresh product, you do not need to add that little things to make it more like home style just you know. Dan Hernandez: Okay, cool. Well, let's get this on the flame and I'm dying to taste this and you just drop these on the pans on there huh? Jorge: Aha. Dan Hernandez: I got one of these fryers at home, I got to try this. Jorge: Most kind of fryers they kind of get a very high temperature. Dan Hernandez: We’re going to strain it now? Jorge: Yeah, we’re going to put it to take the excess oil out of it. That way they would be drain. We’re going to put that on the plate. Dan Hernandez: With fresh lobster. Jorge: Yeah, it must be very hot. Now you must be tired of your lobster so this is what you have everyday at your restaurant. Dan Hernandez: But I don’t get this everyday. I really am going to try this. Oh, that is delicious. Jorge: Juicy. Dan Hernandez: Nice and juicy like you said. You taste all the flavor of the lobster a little bit better. Alright, thank you Jorge. Jorge: Gracias. Dan Hernandez: This is a great dish, something very simple. You could do it at home. What's really neat about this dish is this is one of those things that happens just a relationship between the Mexicans and Americans. Mexicans taking local, Americans out fishing, I had a great time and invite them all for dinner and they came up with this great dish.
