Speaker: Mushrooms have a touch of earthiness to any dish, and planning a meal with them is simple and healthy, mushrooms are packed with the vitamins and fibre and can be used as a side dish as a topping and as an ingredient in the main dish. Merial Bradley: If you are looking for some inspiration in the kitchen then go away because we have the perfect guest with us today and I am sure Clare Jones who have the perfect recipe.
Clare Jones: I do its called baked eggs with mushrooms.
Merial Bradley: Now how do we make this, I see we have little ramekins.
Clare Jones: We do we are going to be baking the eggs in the ramekins but first of all we want to sauté the mushrooms but before that sorry we pre heat the oven, so pre heat the oven to 350 degrees.
Merial Bradley: I see you have already done that here.
Clare Jones: yeah so that’s all set and a little bit of tablespoon of oil into a pan.
Merial Bradley: See I am ready with my Spoon.
Clare Jones: You are, that’s great and 8 ounces of sliced mushrooms
Merial Bradley: Is it just the plain white mushrooms.
Clare Jones: It’s just the white button mushrooms here, and now I am going to sauté those for between 5 and 7 minutes so until all the water comes out of them.
Merial Bradley: Now I know that mushrooms has they have a lot of nutrient adding the eggs in what does that do for us.
Clare Jones: Well actually this makes it a really great nutritional dish because you have the high protein from the eggs and have all the vitamins and minerals from the mushrooms so it’s almost the perfect dish.
Merial Bradley: These are look ready
Clare Jones: They are, so I am going to add 3rd of a cup of chopped red papper and a tablespoon of chopped parsley.
Merial Bradley: That’s fresh parsley
Clare Jones: Yeah fresh parsley, and a little bit of dried herb I am adding basil today.
Merial Bradley: You say basil?
Clare Jones: Some salt and pepper, and now if you wanted you could substitute the red pepper and set about those things I added or really any thing that you have in your fridge do you think it would be tasty and.
Merial Bradley: Right so you can get rid of those little extra, so how long to we cook this for.
Clare Jones: Just for another minute.
Merial Bradley: now I could this now but I know.
Clare Jones: It does look it, and we are going to bake the egg so we are going to put them into some ramekins, if you have ramekins and i am just going to lightly grease them so, so it doesn’t stick.
Merial Bradley: Right
Clare Jones: And the just fill in the mushroom mixture evenly between the 4 ramekins.
Merial Jones: Now baking eggs are nice.
Clare Jones: It is, it’s a little different and it’s really easily to do because it’s really just broken eggs in here and put them in the oven.
Merial Bradley: I am string stuff at here.
Clare Jones: So what you do is just break an egg on to the top of chief the dishes and that goes in the oven at 350 for between 10 and 12 minutes or just until the white is nicely scat and yolk is still a bit runny you don’t want it to hard.
Merial Bradley: Now what if you don’t have ramekins.
Clare Jones: There is a number things you can do, you could use the sort of the white carton dishes that you can get and then you would but the mushrooms around the carton dish and make a little well in the center to put the egg in you could use a coffee for just a little sort of custard cup.
Merial Bradley: As long as the oven is safe.
Clare Jones: Yeah
Merial Bradley: So these just then go in here.
Clare Jones: Yeah, they do first of all just top them with a little bit of cheese I am using some shredded cheese today or you could use jalapeno cheese.
Merial Bradley: You can have some fun this
Clare Jones: Exactly, and I bake for 10 to 12 minutes at 350.
Merial Bradley: Now Clare these look delicious and I have my fork in and you made me wait.
Clare Jones: I have, just to cool them to the touch
Merial Bradley: Okay
Clare Jones: And they are all set.
Merial Bradley: Can I try them now?
Clare Jones: Yeah, get in there.
Merial Bradley: So you just serve it like that
Clare Jones: Yeah just serve it with the salad and some toasting in different toast in the egg and, its good.
Merial Bradley: Delicious, and you know one it is so simple and easy to make.
Clare Jones: It is and you can were it any way you want to so just lie.
