Beryl Stokes: Hi and welcome to Cajun Cooking TV tonight. Tonight, we are making Skin Eatin’ Good Baked Potatoes. So I’ve already got started. I got two big Idaho potatoes and I have a little vegetable brush and I am just going to scrub these really well and we want to scrub it well because we want to be able to eat the skin so. Do that for each one. So I have a aluminium foil. I am going to spray on this some olive oil spray, spray them all over and we did not dry them off because we want to steam pack it once we seal this up. Now I am going to salt them with some sea salt, this is certainly optional but this makes some so good you know not put as much salt on them later on. Put on the salt just to dash if the tone is on each one, just a little bit. Here we go. I am going to seal these up, we have to seal this up diagonal, roll these up.
I have been preheating the oven on 400 and I have a cooking sheet in there, roll it up good. We are going to put these in the oven, first we are going to have one side for 45 minutes and then I will flip them and bake them another 45 minutes. Okay here we go. And we will be back later to eat. It’s been an hour and half a more because I forgot to turn the oven off. But here they are, they are ready, they are all soft.
Male Speaker: You got new gadget there mother?
Beryl Stokes: I got some new gadgets here, they look like fish but they are silicone oven mitts, they are new
Male Speaker: Just like those people on the show
Beryl Stokes: The muppets.
Male Speaker: Yeah, that’s who.
Beryl Stokes: They are not, but that’s what they look like, but they really were not, so we will put some of these on our website. So, we just want to take out the potato. It is hot. We got some fresh butter here. Take my little thing and I’m put the knife to it and what you want to do for your presentation is that we can do at these, as you cut it down the middle and then squeeze it and push down and this is how they do at a restaurant how do we know that daddy.
Male Speaker: We go to them all the time.
Beryl Stokes: That’s right, we go to so many restaurants that’s what they don’t even bother to take order just go in and they just bring the drink order. So you just want to load it up with some butter, sour cream and cheese and there you go, enjoy.
