Banana Peach Blackberry Parfait Recipe

Hi I’m Betty. Welcome to Betty’s Kitchen. Today we’re doing a peach banana
blackberry parfait. I’ve done a parfait for you before recently it was strawberry blueberry.
Those were in season and also 4th of July is coming up and I thought you would like to
have an idea of red white and blue that would work for you dessert. Well if you don’t like
those flavors or you moved on because the season after the strawberry and blueberry
season becomes the peach in blackberry season so you might need to use your peaches
now and might need your recipe.
Also bananas are popular all year long and I’ve I had a request for those so we’ll be able
to fill a lot of requests with this. I did put the bananas and lemon juice just to keep them
nice and fresh while I was putting all the things together and in fact if we do that then I
usually sprinkle a little Splenda that’s just an artificial sweetener or you could do sugar if
you like to do that or you don’t really have to do it at all I just kind of want to take away
that bite that the lemon juice might bring to the bananas.
I did the same thing with the peaches because they have a tendency to turn color. It might
be a little brown if you don’t do something like that and if you’re busy with another chore
then you could very easily let your fruits get to the point where they don’t look very nice
and one of the whole points of making a parfait is to make something that’s just lovely.
You want to layer it and make it look beautiful.
Now over here I have my blackberries. They don’t really need any treatment so I didn’t
add any lemon juice or any Splenda to those. And so I have one banana here that was
peeled and sliced. I have I think 2 peaches peeled and sliced and then the blackberries are
just a pint that were washed and dried with paper towel. So let’s start assembling this
parfait.
I have some yogurt right here. Let’s take this much but just to give you a look at the
canister that it comes in it doesn’t really matter what brand but this flavor is vanilla. I
wanted something white so you could use plain yogurt, that would be fine but it’s not
sweet like whipped topping so you’re going to have to depend on other additives as well
as your fruits to give the sweetness to this parfait.
But we’re going to start by putting just a little bit of that on the bottom and just cushion
and then we’re going to put a little bit of banana. I’ll just put one because the bottom is
very small there maybe ½ because you want it to show through on both sides and this is
just hitting one side so there we go.
Now the next thing I have is called banana cream. It comes in a package like this so you
might buy another canister and it’s usually with bananas and the previous section of your
grocery store so if you’re going to have trouble find it if you want to use this you may
make your own banana pudding and cool it off and then it’s just like this. This actually
get off the corner and squeeze it and get as much out as you want which I have put
probably half of it. It has 2 cups worth in here 16 ounces but I have gotten out about 8
ounces but you could seal this back and then refrigerate it for the next time you want to
use it.
So on top of the bananas I’m going to put some of this nice sweet pudding which is called
banana cream. I’ll just let that go down in the center and spread out a little bit. I think I
can use some more and continuing to later I’m going to have some peaches maybe a
couple now I left them in whole slices because they are so much prettier that way. They
would be I guess a little more friendly for eating if I have chunked them but just not quite
as pretty when you layer them.
And on top of this we’re going to put some blueberries. These were huge, I’m sorry
blackberries. These were huge blackberries so I’m going to put some of the smaller ones.
I want them to be able to get around and you would be able to see them from all sides but
I don’t want to fill up my container here so about three right there. Now I have pretty
much my components that I want from a parfait so what I’m going to do is repeat that and
when I come back I’ll be up near the top and then we’ll finish it off.
Now this is a Sundae dish that I have been using. If you have a glass that is clear. Any
kind of glass where you can see the layers would be nice for a parfait. What I have done
since I left you was just repeat the layers. I started with my vanilla yogurt and then on top
of the vanilla yogurt I put some bananas and then on top of the bananas I put my banana
cream. On top of that we had a layer of peaches and a layer of blackberries so that got us
to this point.
And you can put a lot more each time because if you have a glass of flavors out like this
they n you have more space to fill up. If yours is straight then just do the same amount all
the way up. At this point we just need to top it of in a pretty way because we basically got
our components of the parfait in there so I’m going to take some of this vanilla yogurt
and kind of use it like topping, whip topping. It’s not whip topping and it doesn’t have
this sweet flavor but it’s going to work for our purposes.
A nice look which you may use if you like is to put a little bit of crunchiness on the top.
Now over here, I have a granola bar that is one of the ones that we made earlier a couple
of months back. I think we did granola bars. Homemade granola bars and I have one of
those homemade granola bars and they freeze well and I get them out when I want them
and you can put it in an electric chopper like this and that will allow you to get crumbs.
I’m just going to go in there and get a few crumbs and you could put those crumbs on the
top and that makes a nice ending.
We’re not quite finish. I’m going to kind of push him back in the center and I want to say
also if you don’t want to make granola bars, you can just pick up some kind of cereal bar
this happens to be a Kellogg’s special K bar that is honey nut flavored something that’s
easy to chunk up. This is actually soft. I could probably use my fingers or a knife and get
some crumbles like that or you might put it in case if you want.
To get the finale here we’re going to put one of our blackberries on the very top center
and then when you serve this make sure you have a spoon like this. So this is Betty’s
