It’s a barbecued halibut with roasted potatoes, stay tune. We’re going to fix it up.
The first thing we’re going to do is slice up these potatoes and get them roasted. We’re going to drizzle in a little bit of extra virgin olive oil, finish with some salt and pepper, put on in a sheet pan, go on in the oven 400º for about 20 minutes.
Time to get this halibut going, we got a nice little marinade. We’re going to put all of our barbequed ingredients in here. Chop a little fresh parsley. Put the halibut right in here and boom! We’re going to let is sit for about 20-30 minutes, come back put it in the broiler.
It’s been 20 minutes, our potatoes are done and that means our halibut is done marinating. We’re going to spray a sheet pan a little non stick spray, put that halibut on there, going in the broiler since it’s raining outside on high heat. Half way through the cooking process we are going to flip it over. It takes about six minutes on each side.
This was so easy to make. I really made it—it did take a little bit of time to marinade that fish and roast those potatoes but look at our final product, it looks amazing.
