Barefoot Contessa's Carrot Cake Recipe
What could be more appropriate than a dessert for a gardener than a carrot cake? First
thing I need is 2 cups of sugar. Let’s thing I need 1/3 cups of vegetable oil. This cake is
good it doesn’t use butter; it uses oil, 3 eggs. We’ll just turn this mixer on add the eggs, a
teaspoon of vanilla. Okay that’s the wet ingredients. Now the dry ones, so I need 2-1/2
cups of flour. You put it in a sift because I always sift the dry ingredients 2 teaspoons of
cinnamon, 2 teaspoons of baking soda, ½ teaspoon salt I’m just going to sift all that
together this just mixes it and make sure that there are little things in the flour that you
don’t want in your cake that’s it.
On low speed just add the dry ingredients slowly, you don’t want the flour to clump on
the cake. Remember this is the point you don’t want to over mix it so the flour doesn’t
get tough. Perfect, okay a couple of chopped walnuts, 1 cup of raisins. It’s a really
chunky hardy cake it’s one of my favorites. Okay that goes in and then to make sure the
raisins don’t sink to the bottom of the pan and you put in a tablespoon of flour and just
toss them around. Just follow them in by hand you don’t want to over mix the dough and
I’m going to add the carrots and pineapple.
So its 1 pound of carrots grated. It’s actually a great way to get carrots into your kids half
a cop of chopped pineapple. It’s like old fashioned carrots. Pineapple and carrots and just
fold those in it is’ a really thick batter, it takes a little work to fold it in and then put ½ in
each pan it’s going to be a 2 layer cake into the oven 350 degrees for about an hour and
then make a classic cream cheese frosting. So I need ¾ of pound of cream cheese, ½ a
pound of butter, I’m just going to combine them and don’t let them and 1 teaspoon of
vanilla and a pound of confectioners sugar. If you’re worried about confectioner’s sugar
just shift it before you put it in. Nobody wants clumpy icing, okay.
That’s it, Joe and I have a really great treat he’s working in the garden and I’ve been
working hard in the kitchen, we deserve it.
