Barefoot Contessa's Fresh Pea Soup Recipe
So I’m going to make fresh Pea Soup and I’m going to start the soup one leek. Okay. So into the pot, it’s about a tablespoon of butter, one cup of chopped leeks. Okay, so the next thing I want to do is I need a half of cup of onion. Big spoon, give it a stir. So, these are going to cook for about to 10 minutes until the onions and leeks are really tender, sort of translucent. So, the first thing I’m going to do is put in two cups of chicken stock. I really like to use home made chicken stock but if you don’t have use a can.
When I’m just cooking away on the kitchen I just throw some chicken and vegetables until big pot. Let it boil away for four hours and it’s really good chicken stock. And peas, this is the key. I actually use frozen peas because I think they’re better in this. Fresh peas but the time they get to market there are little sort of starchy and I use 10 ounce of the frozen peas.
So I’m just going to let this cook for about three minutes. I need about a 30 of cup of fresh mint leaves. That should be about right, okay. Right into the soup and teaspoon salt, a little pepper maybe quarter of the teaspoon, give it a little heat, give it stir and that’s it. Pretty simple.
So if you put all of this soup into the blender and turn it on, you’re going to be wearing it. It’s going to be all over your kitchen so what I do is put one label of soup into the blender. Put the lid on. Let’s put it on low. And then take this little top part off and just slowly put the soup in. you may end up with the few peas on the counter but you’re not can end with soup all over you.
This smells great. I can smell the peas and the mint and onions and leeks. Okay, that’s good. And what I’m going to is I’m going to chill the soup and then let it run in some Crème fraiche to add a little richness. I can serve it cold but I’m going to reheat it later.
Now, it just perfectly re heated, just need a little dollop of crème fraiche about a quarter of a cup and now some fresh chives. Right in to the soup, give the stir. This is like a study in green, green peas, green chives, green leeks so that’s going to be great with a sandwich and with just a little extra double crème fraiche. Add a little snip of chives.
