On the menu today, we are going up hardy beef pot roast with new potatoes and corn. This dish is full of vitamin C, vitamin A and iron.
We love this recipe because it is so flavorful and satisfying. But most of all, we love it because if you do not have time to cook it, we can get it freshly delivered to your door.

In your Dutch oven, take the olive oil and pour and coat the bottom of the pan. Then turn your heat unto medium, so we can get the oil hot. Now we are going to place the hot roast into the Dutch oven.
So take the peas, place it right on top of the water, and let it sizzle. We are going to do it for about four minutes on each sides.
Now the both sides are brown, we are going to take it out and sauté the vegetables.
We add in together our carrots, our parsley, our onions and some fresh garlic for taste.
When I go and push the vegetables aside, add out of roast back to the dish, you are going to add the broth just enough so that it hits the surface of the meat. But the meat is not totally immersed in it. Perfect.
Now, you are going to take your cover, place it back on the roast.
In a pre heat oven, take the beef pot roast and cook it for about two hours. After about two hours, add some extra carrots and potatoes and parsley and anything that you want to put in there. We have some vegetables already in there but those are really to add flavor into the stuff.
About 10 minutes or so before you pot roast this fully cooked, we are going to boil up some corn on the cup. This is a traditional vegetable that we are going to use and serve a side dish.
It is ready now to take the pot roast out of the oven. Cut a few slices of the beef, place it in a shallow bowl, spoon the braised vegetables on the top, then at a couple of lidos of that delicious stack, with the corn on the side.
