Manivan Larprom: Lao Pho or Thai Guio Tiao is the most popular soup in Thailand and Lao.
How to make Lao Pho or Thai Guio Tiao which is Beef Noodle Soup. In a large pot add 1 pound of beef bones. In this case I have three large pieces of beef bones and then add three liters of cold water. Then one tablespoon of salt and onions. For the aroma add 4 star anis and then bring to boil and then reduce to medium heat. There is going to be foam that will rise to the top and you will need to remove the foam residue. Oil the Pho broth for 30 minutes, allow to cool and then refrigerate. The fat will rise to the top so you need to scoop out the fat and then add the beef balls and bring it back to boil.
Soak Pho noodles in cold water for 30 minutes and then drain. Pho noodles are long and flat and I would like to choose the white Pho noodles. Add some Pho noodles into a dish. In a separate pot bring water to boil and then dish water into the Pho noodles and then after 3 seconds drain the hot water.
Slice the beef as thinly as possible because you want the beef to cook when the hot broth is added into the soup and Tripe is optional, you want to cook tripe separately 30 minutes and then slice against the grain. Now let's put the beef noodle soup together. In the bowl of the cooked Pho noodles add some Tripe and the raw beef. Then add some chopped cilantro, sliced tomatoes, Thai basil, chopped green onions, bean sprouts and squeeze some lime. Every person has his own preference of how much meat, vegetables, and herbs are added into the bowl, and once your bowl is assembled, it is time to add the Pho broth.
Ladle some broth and beef balls into the soup bowl until the broth just covers the noodles. Most people will add condiments into their Pho like 1 tablespoon of hot sauce, 1 tablespoon of oyster sauce and 1 tablespoon of fish sauce. Mix all the ingredients together. Then it's ready to be eaten.
Some people like to add 1 teaspoon of sugar and half teaspoon of MSG. My favorite combination is a half teaspoon of beef flavor, 1/4 teaspoon of shrimp paste, one tablespoon of hot sauce and one of tablespoon of fish sauce. Some people don't like to add any condiments at all and will just mix the soup together and eat. That is how you make Lao Pho or Thai Guio Tiao which is all one thing, Beef Noodle Soup.
