Pace: Hi I’m Pace the greengirls food guru and you are watching the greengirls. Tv. Today I’m going to make a Beet Edamame Mint Salad with Lemon Flax Dressing. So for today’s ingredients you’ll need two bunches of beets, one cup of edamame or Japanese soybeans, one bunch of mint, one lemon and four tablespoons of flax oil.
First step, we are going to cut the tops of our beets. The beet greens were actually really tasty, so save these chop up and just sautee them little bit of olive oil and salt they are really healthy too. Cut the tips off and take a vegetable peeler and peel the skin off and we are going to quartered them and steam them for about 15 to 20 minutes. Beets keep fat from depositing the liver, all the ingredients I’ve chosen for the salad today are good for the refreshing, which we all need and to the holidays especially you are taking my add that cocktails which I know I was.
Let’s steam these beets and cook the edamame. I’ve already got the water boiling over here. So we are going to steam the beets for about 15 minutes, just until their tender and then I’ve got the edamame and I going to salt the water for edamame pretty heavily its already boiling, because salty only thing is going to flavor the edamame and this only take about 5 minutes and its been frozen so its can give you an idea cooking time.
Al right, so well that’s happening let’s go make our salad dressing. So we are going to zest the lemon. Lemon is wonderful and it toxifying the liver as well. Smells great too. Cut the lemon in half and which can use all the juices with lemon, grab your whisk and slowly we are going add in the flax oil to make a nice soulification with the lemon is zest in the lemon juice. Flax oil is really good for you because helps to move food through the digestive track, so the beets are steamed the edamame are done we got our salad dressing now its time to toss the beet segments in the salad dressing and mix it through the range it in a salad bowl the edamame.
