The challenge is to remove the bill without the bottle falling over. You can only touch the bill, you cannot touch the bottle. If you try to do it really fast, change the side, the bottle will fall over and this is what most people will try so it is great for bets.
But you need a different technique to remove the bill. The technique in this variation is to hit the table with one hand and at the same time gently pull the bill with the other. If you do so, the result will be something like this.
