Thanks for checking out fixmyrecipe.com, I am Chef Billy Parisi, our new fix goes to Rob of San Francisco California. He submitted a recipe of mussels has no clue what to do with them and a recipe he sent is way to bland to televise. Pay close attention, we are going to be fix you right up.
Now matter where you are in the US it is really difficult to get fresh mussels so your best bet is to go to your local grocery store and get them frozen. The funny thing is when I picked this up I asked the guy where I get mussels and he did this. Do not do that, pay close attention lets gets started. In a really large sauté pan get an smoke and hot lets add in extra virgin olive oil and we are going to caramelize a lot of garlic and a lot of shallots.
You really probably sick of me seeing this but if I set up before I will set 4 millions times after it. Take the time to caramelize your food it is give a chance for all the sugar to come out and all those wonderful flavors. So, once this garlic and shallots are caramelized, we are going to add in our mussels. Cook them for about 3-4 minutes and deglazed with white win.
Alright Sir Rob once the wine is just about evaporated we are going to go had and add in some chicken stock, fresh thyme we are going to let this bad boy simmer about 68 minutes. Now, I loved all the juices there in these mussels so I want some bread to soak it all I loved. So, in the mean time let us go have and slice up some French bread paste it with some little olive oil and heat it in the oven to toast up and it’s going to go perfect with these mussels.
Alright let us and had and place this up but first do not forget to season with salt and pepper and finish with whole butter. It never fails; it is unbelievable in every single time. I know you said you are not quit sure Rob what to do with this mussels? Keep that recipe on hold try out this one and you are going love this fix
