Welcome to Fall, I am Pam Austin director of nutrition at ediets.com, Today I am going to introduce one of our new meals from our falls best diet plan. When you see the ingredients and savor the aroma, you will find it hard to believe that it is part of a meal plan.
Broiled Cumin rubbed pork chops with pumpkin risotto and mixed grains, we are going to pre heat the broiler then we are going to take our pork chop, rinse it and then pat it dry. And then take a little bit of the pepper, mix in a little bit of garlic, now if you have fresh garlic you can use that also. Take a little bit of the cumin, now, we are going to mix that all together so you have a nice seasoning blend then we are going to take this and rub it over to the pork. It is easier to use a spoon at beginning but I also like to get my hands into it a little bit so we know that we get all the meat covered.
Then take the pork chop, place it into the pan then we are going to broil the pork approximately 68 inches from the heat sort for about five to seven minutes on each side.
Risotto is a creamy Italian rice dish, it can be made from arborino rice, this type of rice actually has short fat grains which have a soft starchy shell and a hard crispy center. I will show you how to prepare it, in a saucepan we are going to combine the onion, oil and nutmeg, we are going to stir it often until the onion is limp and a little bit more translucent.
We are going to mix a little bit of the broth along with the tiny bit of cornstarch until smooth. We are then going to add some white wine and then our pumpkin, we are going to slowly take the broth and pumpkin and wine mixture and pour it over the grains and we want to slowly do this so that it is able to absorb the water but still stay firm inside.
Now we are going to cover and remove from the heat, let stand about five minutes or so until the liquid is absorbed. Then let us stir in the parmesan cheese, the flavor for all cooking are warm and pungent, the colorful autumn vegetables and herbs and their lean proteins are perfect for the season.
