My femur starts here and ends there. This particular region is going to become my baseball ham and this should also be known as my sirloin tip. So you know that at the end here is going to be my knee cap or my patella and this muscle over here. Now this muscle along with this muscle and this muscle would make up my foot ball ham, on beef this muscle would be known as my inside round. This muscle here would be known as my eye of round and this muscle here would be known as my outside round.
What we want to do now is remove this femur so I would be able to make an incision to expose my femur. There is a seam in between my sirloin tip and my inside round. Generally, what you want you want to do is start your knife off with the face of your knife up against the femur bone and keeping this part of my knife moving along this seam here. I’m going to make a cut. I don’t need to see it because I can feel it with the side of my knife here. So keeping my knife right up against that femur, I’m going right through and that’s the exposure that I’m looking for.
Now from this point, I’m going to fully expose my femur so this way I can remove it, and you expose on either side. So as you could tell what I’m doing here is now I’ve exposed my femur on either side. I’m now going to shape around my femur. This is that classic dog bone. Whenever you’re watching the Bugs bunny and Tweety show and they always have a dog or any cartoon, whenever they have a dog walking around with a bone, this is that bone that is classically defined as a dog bone, this is your pork thinner bone and you’re about to see that in a moment.
Okay, so this is your femur bone, this is your classic dog bone. So now what I’m going to do is I’m going to remove my base ball ham for my foot ball ham. Once again, my base ball ham is my sirloin tip region. How I know, when you’re looking at this and you’re saying, wow it all looks the same, how do I distinguish my sirloin tip from all of the other muscles? The best guide here is your knee cap or the patella. So I could see my patella right here. Now I’m going to remove that patella. So now what’s left with is my foot ball ham.
