Thanks for checking out another episode of www.fixmyrecipe.com. I am Chef Billy Parisi, our new fix goes to Suzie of Northville, Virginia, sent me a recipe for biscuits, said she keep coming up with honky puffs. Don't worry Suzie; we are going to fix you right up. Suzy, the first thing we need to do is sit together all of our dry ingredients and give it a little whisk. Suzie, once our dry ingredients are together at this point, we want to cream in our butter till it's about the size of rice.
Suzie, once our butter is creamed in at this point, we want to add our butter milk. But be sure to do it a little bit at a time. Also Suzie, be sure to not overwork this dough, but you do want it to be completely incorporated. On a lightly floured surface, pour your dough on to it, roll it out, but you want to make sure it remains about an inch thick. Then using a cookie cuter or a glass, form a perfect circular butter milk biscuits and on a sheet pan lying with parchment paper, let's place those biscuits and you got to brush these bad boys with a little melted butter.
Suzie, now we are going to go into the oven on 350 degrees. I know your recipe said 400 or 425 that is just way too hot. Keep it at 350, throw them in the oven 12 to 15 minutes. Oh yes Suzie! Good old-fashioned country style butter milk biscuits. Let's try to take this off there, look at that, perfectly flaky and fluffy. Suzie, feel like I'm in Virginia with you, try a couple of things. Don't over-knead the dough and be sure to turn that temperature down. Feel little passion and love, and these biscuits are going to turn out perfect. Alright Suzie, thank you again for writing in.
