This works fine, done this 15 years ago to get me some hot soup. The fire will get the water hot without melting the plastic. Unless you have a thick plastic bottle that's not good in transporting the heat to the water... It's safer to place the bottle right up above hot coals though, with the lid off. It's a bit the same as to put a piece of paper tight on the outer skin of your hand. You won't be able to burn a hole in the paper, since all head will be transfered to your hand and will burn you long before the paper burns :-)

isn't there a concern that the heat may cause the plastic to exude volatile toxic compounds to the water, making it unsafe for drinking?

Heated liquid expands. There is a danger of the bottle exploding weel before the temperature reached 212 degrees (boiling)

Not fake
This works. You can use a papercup and a candle too. The water absorbs the heat. A bottle with air in it will, obviously, melt where there is no water to absorb the heat.
