Rocco: I love to eat everything but I want to be healthy so how do you do both? Here the top five ingredients you have to have in your kitchen your healthy and flavorful food and that’s the trick. How do you make it healthy and flavorful?
Greek yogurt if you love a wheat butter and heavy cream tasting food, I know what makes it taste good but first think of this, cup of butter 16 hundred calories, a cup of heavy cream 8 hundred calories, a cup of Greek yogurt is only about a hundred and twenty calories. It’s rich, its thick, its creamy, full of great protein, really good for you. Pretty sure you can do the math.
As a chef who train in Paris I felt like it was cheating when I started adding corn starch to this recipes, but now I realize it really help make food thick rich creamy and delicious without adding pounds of butter and cream. A little bit of corn starch on your soups and sauces will make a big difference in taste and wont carb your arteries.
Aromatics like garlic’s, scallions, onions, herbs, lemon grass these are things that lots of flavor to your food without adding any calories, plus studies have shown that eating about two table spoon of garlic and scallions a day can help reduce the risk of cancer.
Dijon mustard one of my favorite all time ingredients, the number flavor detonator in my book. a teaspoon of mustard will go long way and blowing up your dish from just ordinary to superb, chef like restaurant quality and it only has a five calories and no fat.
Low fat low sodium chicken broth is a miracle to the home chef. It’s the best tasting water you’ll ever put in that any of your ingredients. It’s got hundreds of uses from cooking grains to making soups and helps me take 9 hundred calories off my fettuccini Alfredo and that is good news for an Italian boy like me.
