In the last move, with pawn at c7 why not just move rook back to a8?

"Black could use bishop at mid-center to cover spot where pawn would be promoted " No because if Bishop goes on f5 to cover c8 the white Pawn will be promoted taking the knight in b8.

If the Black king moves to take the white pawn, then it can just take the black knight to promote.

black: must not Nc6 (last but one) but change to Bf5 Then c8 will be attacked and white can't move c8.

umm, when white is threatening c7, why not play Nxc6? You traded your bishop for the knight, so let the rook take it. Black is in a better position?
