Thanks for checking out FixMyRecipe.Com, Chef Billy Parisi here. Our new featured fix goes to Andy And Taylor of Columbia, Missouri. So they want a little more authenticity in their chicken lo mein. Andy and Taylor, you guys said you wanted to feel like you were in Chinatown. With the recipe you submitted, you would have gotten there on a buggy and a horse. Don’t worry, we’re going to get you there even quicker than that.
First thing that we need to do is cut our chicken, put a little nice Asian marinade on it and let it sit for about 20 to 30 minutes. We’re going to cut up some fresh herbs also, basil and cilantro. While our chicken is marinating in the refrigerator, let’s get cracking on all the other ingredients that we need to make this chicken lo mein. In a small sauce pan on medium high heat, add in oyster sauce and chicken stock, and were going to let this reduce to about half the size.
Okay gentlemen, it is really time to start multi tasking. We are going to prepare our vegetables and get them ready for saut?ing and then we’re going to cook our chicken. And let me tell you something, if you want to be in Chinatown, you better be using a cleaver too.
Guys, be sure to keep an eye on that sauce. When it reduces in half, all the salts come out and it gets really salty. So if that is the case, hit a little more chicken stock in there so it’s not going to hurt. In a saut? pan, let’s add a little sesame oil. Don’t forget to put it on high heat. Cook this chicken. Be sure to get a really nice caramelization on our mushrooms before we add on the rest of our veggies.
Guys, it’s chicken lo mein and not spaghetti lo mein that’s why we need to use lo mein noodles. We’re simply going to add everything together right into our vegetable wok.
