When I come home famished from a busy day at work, I want something that is effortless, fast and healthy and make chicken mushroom casadias are definitely my go-to. They just solve it all for me. And just off here. Go little bit of canola oil, hard, healthy oil in a pan, just about a half a tablespoon. I’m going to cut up this onion, the half of a large onion, the hot in the pan. Just let that soften a bit. And next, I’m adding some mushrooms. So just about four ounces of mushrooms, just regular mushrooms, just going to chop them up coarsely.
Mushrooms, I think are really under appreciated in general. People think they don’t have much nutritional value, but actually, they’re really high in B Vitamins including B6, which is a vitamin that helps us get the most out of our protein in foods. And just put these in the pan with the onions. Okay. I’ll just let this cook for about five minutes ‘til the mushroom waters evaporated and they start to get nice and brown. Just run to the fridge to get my other ingredients.
Okay. I’m just going to get some garlic into that pan to just add a little more flavor. I just press that out. Now for my skinless, boneless chicken breast that’s cooked. I’m just going to use half of this piece right here. So I’m going to cut this into chunks. Just toss that in like lean protein, really help to make this casidia a meal, half a teaspoon of cumin. This gives a wonderful, dry flavor, classical. It’s from the South west in the Mexican cooking. As is, oregano also very classic, great herbal flavor and chilly powder, which is a combination of cumin actually, oregano and chillies that give off more flavor than heat. So it’s a real flavorful situation happening here. And get another vegetable in there. And I just love a bag of spinach. Whoever invented this, I thank you now. One of the greatest time savers is not having to wash all that sand out of spinach. Just going to chop for the cup of it and these tender little leaves pack are real antioxidant punch. They have tons of nutrients. I had them as minerals. They’re quite powerful. Toss that in. I’m just going to cook this until it wilts. Just about two minutes. It doesn’t need to. It’s very long at all. I’ll actually just let that sit here while I get the cheese grated. What would be a casadia without some keso. And this is not low fat cheddar. This is the real deal and I use extra sharp, so a little bit goes along the way. And for this whole casadia, which serves two, I just need half a cup. That should be about right. And I like these whole wheat tortillas. So I’ll just start off by piling a little bit of the grated cheddar here. Now, for this, the gorgeous mixture, chicken and mushroom mixture, I’m just going to make sure it’s all around there evenly.
Just sprinkle the rest of the cheese on top. Okay. That goes on top. It’s a nice, big casadia. This serves two. Just a little cooking spray in a non-stick pan and just place the tortilla gently in there. Just going to let that cook about three minutes until it’s nice and golden brown on the bottom and the cheese is melty. The great thing about casadias is that you could also serve this cut into smaller pieces. It’s wonderful at a cocktail party. Everyone loves to nibble on them with drinks. It’s easy to eat. It’s healthy and it’s fast. You can’t go wrong with that.
So I’m just going to check to see if that’s golden brown. And it is. And then carefully flip it over. This thing is loaded, so got to be gentle. Now, just three minutes on that side. And while that’s cooking, I’ll get my condiments ready, some sour cream. And I use reduce fat sour cream, not non-fat. Reduced fat, you really are not compromising in flavor and texture. And there’s generally no extra additives where it’s fat free. A lot of times, you get extra additives. And some salsa, two tablespoons there should do it. I’ll just get this baby out onto my cutting board here. There we go. I’ll cut into quarters because this is a meal. A meal for two makes for a great dinner or lunch. It looks so good. In me against the clock has never and it’s easy.
