Rita: Very well. Thank you, Walter. And how are you?
Walter: Very, well thank you. Tell us, what is the name this delicious dish that you will prepare for us today?
Rita: Today’s dish is called “Beans with Reins” and it is a typical dish from Chile
Walter: That’s great. What are the ingredients that we are going to use?
Rita: Alright, for a full pot of beans, we will need approximately 700 grams of beans, 3 tablespoons of vegetable oil, 3 tablespoons of chili powder, one chopped onion a section of pumpkin, and 200 grams of pasta noodles.
Walter: Don’t forget the sea salt, salt to taste (sea salt).
Rita: Sea salt, very good.
Walter: Tell us where are we going to start?
Rita: Well, because the beans are very hard, we must soak them in plenty of water overnight. Later in the morning, when you are going to cook them; change the water, put them in a pot, and cook them for around 2 hours. We add salt to taste, a tablespoon. And so far, this is how the beans look.
Walter: Tell me, we had to leave these beans to soak overnight, but how high should the water level be above the layer of beans?
Rita: It must exceed it. It must be higher than the layer of beans by a lot; plenty of water.
Walter: perfect.
Rita: Well, what we are going to do now is sauté the beans to give them some flavor. Set this on the side, could you hand me the pan, please?
Walter: Of course here you go.
Rita: Thank you very much.
Walter: What do you need? Onions?
Rita: Onions. Add the onions and the oil. A tablespoon; please.
Walter: Of course here you go.
Rita: Thank you. And to give it a little more taste, we put in a bit of chili powder.
Walter: While you prepare this sauté, how may I help you?
Rita: What you could do in the mean time is peel and chop the pumpkin please.
Walter: (Sure.)
Rita: In to small cubes. As our beans are almost ready, the smaller the pieces the quicker they will be get done.
Walter: Of course. The pumpkin is pretty hard, that’s why it must be cut into small pieces, right?
Rita: yes.
Walter: Okay. Beans with noodles Reins is a very traditional dish. I have many foreign friends who, only by hearing the name, it catches their attention they remind me of it, whenever they can. I have a friend from Costa Rica who was very impressed by this dish.
Rita: Beans with Noodle Reins is very delicious.
Walter: Is this thickness Okay?
Rita: Yes, could you cut in half, please?
Walter: Sure. The onion smell very good.
Rita: The chili powder gives it a very special flavor. Even though the pumpkin is hard, you don’t seem to have trouble cutting it?
Walter: No, we just need to be careful in case the knife is too sharp, not to cut ourselves, that’s all. And always remember to cut towards the cutting mat.
Rita: Well, the onion is ready, so I will turn off, and I’m going to add it to the pot of beans.
Walter: It’s so beautiful here.

Walter: When do you add the pumpkin?

Walter: It is very common in chile to present this type of dish on a clay bowl.
Rita: Also, this dish is typically prepared in the winter and autumn seasons. It has a high protein content. When the dish is served, you add the chili powder with oil on top. And there’s the prepared dish.
