Chocolate Shortbread Cookies
I love cookies at home for the holidays. At my house, there are tons of cookies everywhere, all different kinds. I love chocolate shortbread cookies with the white chocolate dipping sauce. They’re so delicious and so easy to make. I melt one ounce of bittersweet chocolate with two ounces of semi sweet chocolate and a cream. Two sticks of butter with half of cup of sugar. I’m going to stir creamy and fluffy and I’m going to slowly add my two cups of sifted flour.
This still already smells fantastic. A classic shortbread and I’m going to make it even better by adding this more melted chocolate. So stirring it in, getting this wonderful chocolaty smell, coating the shortbread dough. So now that all the ingredients are combined, I’m putting it to this sheet tray, spread it out nice and evenly, get all those corners. We know everybody wants that corner piece of shortbread. So when it’s all spread nice and even, tap it a little bit, you pop it in the oven at 350 degrees for 35 minutes, and when you take it out, it looks like this.
When the cookies are still warm, cut them into rectangles and now I’ll make my wonderful white chocolate dipping sauce. I had eight ounces of white chocolate, cut into small pieces. Pour over it one cup of warm cream, mix it a little the white chocolate melts. And now to give it a little tang, I’m going to add about a half of cup of sour cream, and I’ll give it a little body.
That tangy sour cream like that sweet white chocolate is the perfect combination for these chocolaty shortbreads. I love cookies that have a companion and this white chocolate sauce you can wrap it in a pretty jar and bring it a friend’s house as a gift for the holidays. It’s perfect. Hmm, so festive.
