Chocolate Stout Cake
Male: Aspen is America’s Premiere Ski Resort and Ajax Tavern is it’s most re-
knowned restaurant located at the base of the glorious Silver Queen. How
chicky am I coming to Aspen, Colorado the home of great beers. Colorado
the Beer state, I come to the— Ajax Tavern in Aspen and I ask you why
would you want to use Guinness when you got so many great beers in the
state.
Female: Guinness is a great beer it has it’s own flavor, it’s own taste and it
absolutely does great with the chocolate cake that were going to do here
today.
Male: Your going to make a chocolate cake with Guinness
Female: With Guiness.
Male: Well you can’t really do that with bud can you?
Female: No.
Male: So what do we do with this?
Female: Right now we are going to add that into our mixing bowl, we’re going to
add the brown sugar then the egg, all purpose flour and a bit of baking
soda, baking powder also. The cocoa powder which is fabulous with the
Guinness.
Male: See I taste those dark flavors in my head. Brown Sugar, Guinness
Female: And the butter. An there you go?
Male: And this beer cake is ready to bake, so it comes back as a solid mass of
love chocolate cake?
Female: It does.
Male: And here is.
Female: We’re going to prepare a Zabaglione.
Male: Beating sugar and egg yolks together over low heat Dina slowly drizzles a
stream of Irish whisky to create the Zabaglione. So you got your Guinness
soaked chocolate.
Female: Correct.
Male: You’re Zabaglione with the Irish whisky and what is this you’re going to
use?
Female: This is just simple syrup which is a couple of water or a cup of sugar
boiled and then we added Guinness beer to it. More Guinness in the
Guinness Cake.
Male: Dina drops chunks of cake into a classic pine flask and spoons a simple
sauce of Brandy, sugar and Colorado cherries. Finally a mixture of
Zabaglione and whipped cream tops it all off.

Female: It is.
Male: Because you’ll get a lot if you finish this up. My goodness, I got to try
some though here. Let’s start.
Female: Cherry Zabaglione and Guinness.
Male: Wow Cheers. Is this on the menu? It is now. My God their going to come
running this is fantastic.
Female: We serve it as an additional while.
Male: Really, it should be a permanent. So Dina you said you brought an Italian
magnificence to this dish. We got to head back to— where it’s full of Irish
and Italian and crazy Australians too.
