Chocolate Truffles Recipe
Standard chocolates are nice, but who can resist a homemade caramel chocolate? My recipe Valentine’s Day truffle is caramelized on it, a touch of rum and some sea salt and sprinkles to finish. That’s going to make your Valentine’s Day different from any other and here’s how you do it.
Combine half a cup each of semi sweet and bitter sweet chocolate. Now, double boiler sounds fancy but it’s really just a pot with some simmering water in a bowl fitted over the top, so that it will gently steam heats whenever you’re looking them melt instead of being more brutal with direct heat from the steel. We’re just going to combine one stick of butter. Give that a stir, just to kind of get the ingredients familiar with each other. I’m going to need two cups of powdered sugar and just sift it and that’s really fun, come on, that’s like little Valentine’s Day festivity.
For another really fun part of the recipe and I love to do this because it’s so simple and it’s really going to make you feel like a professional chef at home. I’m just going to make a little caramel by simply drizzling about a third of a cup of honey into a little sauté pan or pot. Now I’m just going to bubble that honey. When you see it’s very foamy, just always fun and I see that this is melted, you really don’t want to notice for an excess of time. Once this melted together, right off this steel we go. I always stir it a little bit just to make sure all the butters integrated and to cooling ever so slightly. Can you see that wonderful froth and that wonderful sort of golden color? That says Valentine’s seduction to me.
Here we go. Into the chocolate, look at all that, stir it that right in and add two tablespoons and I just add a little extra of dark rum. I want to just eat this and now you didn’t even finish the recipe. Those two cups of sifted powdered sugar, stir that in. So, this is going to start to come together. The chocolate will just kind of gather up in the center of the bowl and just start sucking in the powdered sugar from the edges.
And now the bowl mixing all this is still a little bit warm. So, I’ll have to take a cold bowl and just transfer the mixture to a cooler bowl. That’s going to help you a little bit. Just cool this chocolate mixture down so we can get rare pudding as quickly as possible. So, I’ve got something from there from my childhood, dark chocolate sprinkles and I like to make with something chaffy.
And in this case I’ve chosen a little bit of “fleur de sel” or fancy sea salt. Mix it them with the sprinkles. When you mix a little bit of a savory flavor with sweet, I think that’s really perfect for Valentine’s Day. And now, it’s time to get your hand started before a very good cause. Just take a little bit. Now, I’m just going to roll them right in those sprinkles and I just can’t resist, I have to taste one. I’m getting the chocolate and the honey, the rum, and then that last sensation we get is that a little bit of sea salt with the chocolate sprinkles. Its makes it to me, the most well rounded Valentine’s Day treat.
