Chopped Steak Recipe

Thanks for stopping by, you’re watching fixmyrecipe.com. I’m chef Billy Parisi and our new fix goes to Donna of Chicago, Illinois. She submitted a recipe fix to me for what I think is a chop steak. Oh boy! You’ve got some serious problems here. Pay close attention, we are going to hook you up. Donna, a piece of leather meat, a can of French onion and cream of mushroom soup. That is just horrible and assault overload. We’re going to fix you up. To start, we’re going to use ground lean meat, 80% lean, 20% fat, go ahead and form your patties, season very well with salt and pepper and in a little bit of olive oil, we are going to sear them to the desired temperature. Donna, we’re going to make this recipe a lot more healthy, a lot more flavor and a lot less salt, so let’s go ahead and chop up these onions, mushrooms and fresh thyme. Donna, I like my ground beef at least medium. It takes about eight minutes or so on each side on medium high heat, let’s go ahead and set them to the side and now, we are going to caramelize our onion and mushrooms. Alright, once we have a really nice cameralization on our vegetables, we are going to go ahead and de-glaze with just a little bit of red wine, add in our beefstock, and fresh thyme. We want to reduce this sauce in half by cooking it on high heat. Don’t forget to season with salt and pepper. We’re going to finish with a little whole butter and we are going to pour it right on top of our chop steak and you know I’m going to eat some. Donna, so much flavor in the right amount of seasoning. Do away with all of those canned soups. Use fresh onions and fresh mushrooms, you are going to love your brand new chopped steak. Donna, either way, I think your husband loves you just the same, but just in case, he doesn’t like your cooking this might help out a little bit. Don’t forget to come back tomorrow.
