Christmas Brussels Sprouts Recipe

Niall Harbison: One of the most popular dishes to cook at Christmas time as a side dish our Brussel Sprout. Now the first thing you want to do to prepare them is to just to trim that little edge of and peel it away some of those exterior leaves, they might be bruised or slightly tarnished. You then want to cut a little X shape into it. Now what this is going to do is, that’s going to help the heat penetrate right through to the center and I’m sure that the Brussel Sprouts don’t over cook. Now a lot of people have a sort of love-hate relationship with sprouts and one of the main reasons for that I think is because they would have them cooked absolute mush. So, the important thing to do is plunge them into a boiling pot of really, really hot water with lots of salt in there. We are going to cook them for about 12 to 15 minutes just on that they become nice and sort of tender, then we are going to strain them and we are going to actually place them into a light sauté pan with a little bit of butter and a small amount of the cooking liquor. Now Brussel Sprouts come from the same family that Cabbage does, Collard Greens, Broccoli and Kale.
