So it's the holiday period and you have got a bit of spare time on your hands. You are waking up in the morning, you might want a little breakfast treat. This is the one for you, it's really, really simple and quick to prepare. It's caramelized fruit with pancakes, and it's going to be really, really delicious. And the best thing to do is to wake up before anybody else, go down, prepare it, and they are going to have the biggest smile on their face when you make it for them.
So peel the bananas. We are just going to put them into the little char grill pan, and caramelize them up. We have also got a few strawberries. What I want to do is get a little bit of color on those bananas first before I add any strawberries, because the strawberries got more juice, they are going to take less time to cook, less time to caramelize.
Now, I am going to add in a little bit of sugar as well, but loads of these fruits have actually got natural sugars in there, which are going to come out and help the process along as well. So strawberries just sort of quartered up roughly.
Now, blueberries are the best fruit ever to use in pancakes, because what happens is, we are going to heat them up and then when you bite into there, they are just going to burst and there is going to be a huge explosion full of flavor. So I will just pop those down at the back of the pan. Just using dry heat here and a nonstick pan. In go strawberries, and just a little sprinkling of sugar over there, and what's going to happen is that's going to caramelize as well. And then just to help the process along, add butter.
Now, this might not be the healthiest recipe you have ever had in your life, but it is the holiday period, you are like enjoying yourself. You have been worrying about enjoying it up in the New Year. You can see that butter and sugar starting to do the work. If I flip those bananas over, they have really caramelized up lovely.
And that's it. Basically what I am going to do is turn the gas up and set that to one side, so that there's enough heat left in there, by the time we make our pancakes, those will have reduced and they will be absolutely delicious.
Now, to make the pancakes, nonstick pan onto a major heat. Now, I don't actually have a recipe for pancakes, because what happens is, there is lots of different size eggs, so there is no point in giving you an exact amount that you go in and make it. What I am going to show you is the technique, just couple of eggs, a little bit of flour, and what you are looking for is basically a consistency, which I will show you in a second.
Once you have got that consistency, you are laughing. In there, with a little bit of milk, and just bring it altogether with your whisk. Really no excuse not to make something like this for your mates or your family, because it's literally going to take you about four or five minutes.
So that's the consistency I am looking for, no recipe, but you just want it sort of so that it falls off the whisk in quite a smooth stream, just like that.
Now, into my pan, a little bit of butter. Swirl it around. Once it's completely melted, in with your pancake mix.
Now, this is where it's totally up to you, you can have little baby ones, you can have them nice and wide, you can make them a little bit thicker. I like them really thin. So just swirl that mixture out, and that's absolutely perfect.
Now, the key here is, you could of course try and be flashy and flip it and all that, but the key is just to let it set on that side, which is going to take about 30 seconds, and once it gets sort of golden brown in color, we are going to flip it over, and then we are nearly ready to serve them up.
So that's pretty much ready. Just using a spatula, simple as that, flip it over, and you can see that it has browned up really, really nicely, and we are pretty much ready to serve it up.
You can see that the fruits have caramelized over really, really nicely. That pancake is not going to take us long, because it's almost cooked through from the other side. We will just put it in our plate, turn off the gas, and on goes those lovely caramelized fruits.
Now, there is absolutely no reason why you can't go and make this for somebody in your family or friends or girlfriend/boyfriend this Christmas. It's really, really simple pancakes with caramelized fruits.
