Hi everyone. Welcome back to Le Gourmet TV. Today we’re going to make a clam and chorizo angel hair pasta out of this cookbook, Wine Bar Food. Fairly simple recipe, lots of flavors going on here, so let’s get started.
So I’ve got a deep frying pan. Got it on the stove and we’re going to bring it up to temperature. To the pan, we’re going to add two or three tablespoons of olive oil. And then I’ve got this chorizo sausage that I’ve taken the casing off, and we’re going to put it in the frying pan. We’re going to break it up and we’re going to brown it off. Now that the sausage is brown, we’re going to add in two cloves of garlic. We’re only going to leave the garlic in for about a minute before we add the next ingredients. Next into the pan is a cup of orange juice, a cup of chicken stock and a bay leaf. We’ll just scrape the bottom of the pan to get all that flavor into the juice. Add in a little bit of salt, some fresh ground pepper. Next we’re going to add about a pound of clams. So it’s going to take seven or eight minutes to cook. We’ll just cover it and let it go. In the meantime, I’ve got a pot of water boiling and I’m going to cook the pasta.
So about seven minutes have gone by and all of the clams are cooked. And we can tell because they’ve opened up completely. Our pasta is also cooked so we’re going to now add the pasta into the clam mixture. So I haven’t completely cooked the pasta. It’s about three quarters of the way cooked. I want to cook it the rest of the way in the sauce with the clams. I want it to absorb all of those flavors. So I’ll just mix that in. Get it right in there with all of the juice. Next I’m going to add four tomatoes and some orange segments. I’m just going to mix that in. Put the lid back on and let it cook for about another two minutes.
So this is now completely cooked and ready to serve. So there it is – angel hair pasta with clams and chorizo. Just before you take it to the table, just sprinkle some cilantro over the top and then you just serve it up. I hope you enjoy it. Please come back again soon.
