You need space, you need room to groove when you are cooking. So always work with a big board. Get rid of those tini-tiny little ones and your cutting on plastic too. That makes your knives very dull. Rubber boards are terrific and you should keep those when you handle raw meats and fish. When you are dealing with all your herbs and your veggies, the wooden cutting board is your buddy. Now, wooden cutting boards are course because they are made of wood. So what I don’t like is the flavor of soap that gets in them if you use dish washing liquid on them. Here is the way my grandfather use to clean his cutting boards when my mother cleans her cutting boards and it is fabulous, check it out. Course salt that is all you have got. Here the board is stained, you see from lots of chopping of herbs and stuff. It picks up all the color and all of the flavor and odors off the board. So you just pile up some plain old salt, hot water, no soap necessary. Salt kills all the germs. It is a great natural disinfectant and it picks up all of the color. It picks up all of the stain that is on the board. So you just keep adding salt and rubbing it with a little sponge action here and you keep going until you pick up all the flavor and all the color off the cutting board. It is very easy. Another thing you want to make sure that doesn’t happen to your board is you don’t want it to warp. So after you get done cleaning it with your course salt and a good shoulder rub here. I would make my husband do this one because there is a lot of green on this boy but whatever. After you get it all nice and clean, you want to do two things. Occasionally, you want to rub it with a little bit of your EVO or a little bit of olive oil, that will season the wood up a little bit and when you are done cleaning it at the end of every night, stand it up right on its edges so that it does not warp. So seen just like that. Just leave it right up on its edge sitting on the counter and it will stay nice and straight and you can flip flop from one side to another and it will age evenly on both sides. So there you go, enjoy your new cutting.
