Thanks for checking out another episode of FixMyRecipe.com, I’m Chef Billy Parisi and our next recipe goes to Irene Counts of Boise, Idaho. I don’t know what they’re doing in Boise, Irene but let me tell you something, coconut curry sauce is not some curry powder mixed with water. Follow closely I think you're going to be just fine.
We’re going to start off by putting some sesame oil in a pan and sweating all some fresh ginger and garlic. All right our garlic and ginger have been sweating for roughly five to six minutes now I’m going to add in our curry paste. Notice that I said paste and not powder. You can pick this up at pretty much any local super market.
In addition to the curry paste, we’re going to add some tomato paste as well. You want to cook this tomato paste and curry paste together for roughly five minutes until it’s a really nice rust color. Let’s add in our remaining ingredients equal part of cumin, coriander and paprika.
Some soy sauce for some natural salts and of course our coconut milk. All right our sauce have been out for about 20 minutes this is the color that you want Irene. Now what we want to do is strain it adjust the seasonings and give it a little taste. It needs a little more salt though, lot’s of flavor here, we’re going to go perfect on some chicken maybe and some sea bass, it’s completely up to you Irene.
Don’t forget it’s not just some powder-water together are you crazy in Idaho you need to put all this ingredients after all you have all the stuff readily available to you curry paste, garlic, ginger used that Asian infusion and you’re going to be more than happy with our final product here.
