Rachael Ray: There are a lot of Vodka Cream Pasta Sauces out there, I had to rename this You Won't Be Single For Long because so many girls wrote me letters about hooking a fellow using this recipe. Some of them even are getting married or talking there.
Speaker: Okay let's see what's it.
Rachael Ray: Okay, so we have shallots and garlic cooking in a combination of EV Oil or extra-virgin olive oil and butter. Now we are going to heat it with vodka about a cup; three turns of the pan in a slow stream.
Speaker: Okay.
Rachael Ray: And eventually if you see before every time we get together there is always vodka involved. Now you want to use a good quality vodka because just like wine, the flavor will concentrate as it cooks down, so if we use kind of hooch. So you would let this reduce for two or three minutes, we will speed it right through here. After that reduces down by half, alcohol of course cooks out the flavor concentrates then you will add little bit of chicken to that.
Speaker: So you are really doing that because you want the flavor. It's not for the alcohol, you are not going to be all moved to --
Rachael Ray: Correct! No you are not going to be moved in.
Speaker: Okay, good.
Rachael Ray: Although you should serve it with lots of wine and your cheeks will be even rosier for your dates.
Speaker: Okay, good.
Rachael Ray: So then we are going to put in some chicken stock, that's right there. Get it right through grocery store.
Speaker: Okay, good.
Rachael Ray: You have three turns, it's fine, about the same, that's good. Then you would let that reduced out a bit. Then you'd add your tomatoes. One big can of crushed tomatoes, I don't want you to get your outfit all messed.
Speaker: I don't want to get yours messed either.
Rachael Ray: I am used to it, I am always covered with food. I am like a baby; you could see what I made all day like you could see what a baby eats all day. So then you stir this altogether and then after it comes up to a bubble and simmers together then you add in just half a cup of cream, just a touch.
Speaker: After it comes up to a bubble.
Rachael Ray: Right. And then it looks like --
Speaker: You're going to have that and that's going to change the color.
Rachael Ray: Right. You would stir that in and then you season it, the whole thing, you can use the whole thing because it's only half a cup.
Speaker: Okay, good, so that's not that much.
Rachael Ray: It's very simple. That's why that date me ever because you cannot screw it up.
Speaker: Okay, good.
Rachael Ray: So then you'll let it thicken up and it looks like this all garlic and the shallots, two garlics can't pull each other out so it's perfectly fine to have garlic on a date.
Speaker: That's right.
Rachael Ray: That's right. So then you just lay it over your pasta and you save a little extra to toss at the table. I got one altogether over here.
Speaker: You lay it over. You don't put the pasta in this stuff.
Rachael Ray: Yeah, you could put the pasta in here or pour that over there, whichever works best for you. That's why you get a nice steep going, you can toss everything right in the pan.
Speaker: Okay.
Rachael Ray: Anyway, come on down here, this just still be nice and hot. You garnish it with lots of shredded beautiful basil.
Speaker: Any cheese?
Rachael Ray: Oh, yeah, I've got it right here for you. I am coming. Freshly grated parmigiano.
Speaker: This is basil.
Rachael Ray: Basil, go ahead! It's delicious, it's sweet, it is all fruit it is the best date you will ever might pick.
Speaker: Okay.
Rachael Ray: You serve it with a little green salad and nice glass of wine. You are in like wind. You have to be careful though. Do not make this for someone on your first date unless you are sure about them because once you put this for them you can't get rid of them.
Speaker: Good! Okay, I am going to try it. Hmm... I love you.
