Speaker: Alright, three of my favorite ingredients; Crab, artichoke and Potato in Croquettes form. It's more fun to say than paddy. So, that's why I am going to call it a croquette. You are going to take one can of artichoke bottoms, not hearts, artichoke bottoms and just give it a nice dice. Alright, the artichoke hearts have little bit of a leave attach and so little more fibers. So make sure you get artichoke bottoms that's in the same section. I cooked one potato, just because I am making home price. So, I just peeled it, I cut it in chunks, I boiled it for about 15 minutes till it was tender, I drained it. You could also, if you want, bake the potatoes, scoop it out. So, basically one potato is worth of cooked potato, we are going to put it in a big pinch of salt, just about a teaspoon and a couple of grinds of black pepper. So that's one roasted potato I cooked, we are going to mash this so the size of the potato really doesn't matter at this point of effect. If you have some leftover potatoes from the day before, this would work.
Alright, so we added our artichoke that was 114 ounce can of artichoke bottoms into our one cooked potato, salt and pepper. I am just going to give it a mash. Now eventually we are going to form these into little croquette, little cake shapes. So we are not going to get the super, super smooth yet, because we still have to mix in our crab and also an egg. So just give it a kind of a initial mashing there. That is eight ounces of crab meat. Now, if you look at San Francisco shore, a half of pound nice Dungeness crab, you could substitute lobster if you just are a big giant show off. But what I do is I actually got eight ounces of just pasteurized regular cans of crab from the supermarket, it worked fine. So it doesn't really require fresh crab, just a high quality pasteurized can crab from the supermarket is going to work. That's one of whole eight and basically we are going to mix that altogether. So now all the ingredients here as usual of my recipes and all I could make it too much, most people don't cook because it's just too many things going on and I forgot, I need to spike this with some cayenne that's just ruling my house.
Alright, so we'll give that one last mix. So again, one potato mashed up with some artichoke bottoms, half a pound of crabs, salt and pepper, little hot pepper, so simple. Now really mix this dish is this Japanese breadcrumb we are going to use before we saute these, called Panko, okay. Panko is a -- this is in the supermarket by the way, you don't have to go anywhere special for this. It's a larger piece that a normal, what you think of, is a normal plain breadcrumb. It's also very, very sharp edged and crispy. So you really got a crispier product when you fry it with panko, you go ahead anything deep fried in the Japanese restaurant or you can sometimes they cook temporary in it. It's just a really nice texture. So you are going to get a bag of panko and fun to say, alright. So just lay your lumps of mixture that potato, crab and artichoke mixture on the plate, dust a little bit on top, padded onto the fork and then flip them over and then they are pretty easy to handle. So it is now basically coated with the panko, I don't want to dredging these in flour and egg and doing that whole routine; it's just not necessary. The potato is wet and the egg is sticky and these panko breadcrumbs are going to stick right to it.
Then the last step, so easy; just saute in a little bit of olive oil for about five minutes per side on the medium heat until they are golden brown and heat it through. Alright, so delicious; crab and artichoke, natural combination. Potato crab, natural combination. Now you can by seeing the uses as a base for a tuna that I post in our blog. That was demo we posted on the site. Also, you can make a larger paddy, I mean croquette and serve it with half of avocado with some red pepper is going to get there. That was really nice dinner. But anyway, there you go. You can call them cakes, you can call them paddies, you can call them croquettes, it's all the same thing. It's potato crab artichoke saute in some panko and whatever you call it, you are going to call it delicious when you try these.
