Cream of Asparagus Soup
Action that what happens on my set which what happens in your kitchen which is exactly why I love creating my round two recipes for you now some people call them leftovers not me I call them extras. And this is what you are going to do with your extras from your asparagus and tomato tart.
Really super simple recipe, I know you are going to love it is called my Cream of Asparagus Soup and it is today’s round two recipe. First to a medium sauce pan I am adding two tablespoon of canola oil. And then half a medium onion, now the extra asparagus stems from my delicious asparagus and tomato tart. Let that sauté for five minutes so that it gets nice and golden brown. Adding caramelize flavor, now tip off some milk and some parsley this will add some nice green color and fresh flavor.
Stir it up and allow it to simmer and cook for another five minutes. A can of cream of potato soup goes in to the blender and this will help to thicken the soup. Once my asparagus is ready that gets added to the blender as well. I am using a little so not to make a mess. I want you to remember that you have to be really careful when you are putting hot liquid in this blender. Because it expands so only put it in up to a third. Some say half, I always do a third just to be safe.
Perfect now, so strain it back into the pot and be sure not to miss a drop. And to make it extra creamy I am going to whisk in two tablespoons of sour cream. I will add a pinch of salt, some pepper and bring it to a simmer. Once it’s done just lay it into a bowl and it is ready to go. This is such a special round two recipe with only two dollars and 53 cents of new ingredients. That is what I call a money saving round two recipe, I hope you enjoy it.
