Creamy Artichoke Soup
Soup makes a great late night meal and I make a great creamy artichoke soup its got leaks, potatoes and of course artichoke carts. All pure together. It only takes minutes to make but you can save you’re my creamy artichoke soup for as long as you like.
I love having soup for dinner. It something about the warmth for just so comforting just comforts your whole body so I’m going to make my creamy artichoke soup and all though is sounds kind of complicated this is really, really simple. I’m going to show you how to do it.
I’m going to take some leaks and cut off the top and bottom and you just want to make sure remove any of the grit that gets cut sometimes and leaves other leaks so I just cut it right from top of the bottom like this and run in the cold water and free wash my leaks. And they’re in the onion family so they have a very mild onion leaf flavor they give sort of the soup a body texture and sweetness a really nice mild sweetness that I love with the artichokes.
So were going to chop the leaks and add them to my stalk pot we are going to add a little bit olive oil and we are going just basically cook them down until they are tender just like you with onions. So same principle and I also want to add one garlic clove just go ahead and mince it you know when I’ve worked a long day whether it’s catering or working on the kitchen or shooting or being a book tour and I get home late at night and I’m hungry. There’s something about soup there’s just so comforting I absolutely love it and it doesn’t have to take a long time and once you know how to make soup you’ll be making all the time with any ingredients.
I’m going to peel the potato you can see the ingredients very simple things that you would have in your refrigerator or in your pantry all the time. Just cut it. Remember the smaller you cut the potato the quicker its going to cook. Not about one inch cube or so it’s good. And I use this in and I think in any soup. Let’s add the potato with the leak and the garlic. And I’m telling you making these meals beats ranging any time so I cook that down for just about five minutes until the leaks and the potatoes and the garlic are soon are soften and we are also going to add artichokes.
I had some fat artichokes and these are prêt and clean warmly and they are really simple see. I keep them in a freezer so I can pull them out and use them wherever I want. So you throw it in there and chook and stalk. Now you could use water if you want it to with the chicken starches just give it more flavor. And I’m using low sodium chicken artichoke soup I can control how much salt is in my soup. And its getting about twenty minutes go follow that and then I’m going to purate and finish it up with some mascarpone cheese.
Okay, my soup should be ready. It’s nice and thick. So I’m going to add couple tablespoons of mascarpone just for a little add of creaminess and I’m going to show you a little trick here. I’m using a hand blender and with the hand blender I’m going to blend the soup right in the pie. But if you don’t have one of these handy look at it switch I happen to love then you could just use a regular blender the liquid is really hot so you want to make sure and not fill up the blender completely and just do a little bit of a time.
Okay, that is just the way I like it. It smells heavenly. Add a little bit more mascarpone right on top just like that and some chop chives. Okay, time to take a bite. It’s smooth, creamy and inveledy. It’s so perfect, it’s so comforting.
