Creamy Bowtie Pasta with Bacon & Onion
So today on Le Gourmet TV we’re in the kitchen and we’re doing baking, but the crew is getting hungry and I can’t just feed them cake so we’re going to whip up a really quick pasta recipe. I’ve already got a pot of salted water boiling and a package of bow tied pasta goes in, and actually we’ll just give that all the stir so it doesn’t stick together. Now this is a really quick recipe, these ingredients were just kind of a starting point, you can add whatever you want here. So in a frying pan, a deep sided frying pan, on medium high heat, we’re going to put in about a quarter cup of butter, and we’re just going to heat that up, melt it; and I’ve got some home-made bacon, now you don’t have to use home-made bacon, you could use store-bought bacon, you could use prosciutto, you could use ham, really what you want is just sort of that smoky pork flavor. We’ll put that in, on medium heat we’re just going to fry this up and heat it through and make sure that it’s cooked. Okay so now that we’ve got the bacon about 60% cooked, I’m going to add in half a chopped onion, and abut a cup of frozen peas; and we just toss that together, turn the heat down and at this point you just kind of want to soften the onions and bring the peas up to temperature. The bacon is pretty much cooked. Okay so our pasta’s ready so I’ll just take this over to the sink and drain it, now we turn the heat up little bit, add our pasta in with the bacon, peas and onion mixture, just give that a toss, put a little bit of salt and pepper. Now I’ve got half a cup of cream and half to three quarters of freshly grated Parmigiano Regiano and we just want to toss this all, coat it, the cheese is going to melt, it’s going to mix with the cream, you’re going to get this nice, thick sauce really flavorful with that flavor of the butter and the smoky bacon, and pretty much everything is cooked through at this point. All you’re looking to do is just thicken the sauce and coat the pasta. And that’s looking pretty good so I’m going to get a bowl, and we’ll just serve some of this up. And that’s it, a quick cheesy pasta, simple to make, something that’s fast, easy, you can come home from work, you can whip this up and in 15 to 20 minutes you can have dinner on the table.
