Hey thanks for stopping by you’re watching FixMyRecipe.com. I’m Chef Billy Parisi our new fix goes to Rita of Detroit Michigan, submitted the recipe for potato soup. Man this recipe looks bad. I’m going to have to fix you up with the brand new but you are going to be more than happy with this fix.
Rita, when making potatoes soup you got to use other vegetables besides potatoes, so go ahead and dice up some yellow onion , red onion, leeks and celery and Rita what better than using natural salt from bacon. I love bacon like I say it every single time so we’re going to render bacon fat then we’re going to sauté up our vegetables.
You know why I always say it caramelized those vegetables. This is perfect timing because while they are cooking we go ahead and peel and dice up our potatoes, get them ready to throw in our pot. Once those vegetables are nice and caramelized we’re going to go ahead and heat it with chicken stock, bring it to a boil then add in our potatoes and let it simmer.
Once the potatoes are cooked we’re going to put in a hand mixer give it a quick blend. Be sure not to puree the whole thing, you want this soup kind of chunky then we’re going to finished with cream, adjust the seasonings, put a little parsley and you know the end I’ve got to taste this soup.
That’s just comfort food at its best Rita, you know what I think you should do with your recipe, throw in a trash can, try out this one you are going to love this brand new potato soup. Rita, once again thank you so much for writing in we really appreciate it and the best thing about making huge pots of soup is we can freeze in, we can eat it over the next few months.
