Pace: Hi my name is Pace. The greengirls food guru and you are watching the greengirls.tv. The greengirls.com. We are going to make Dashi-Braised Shitakes Mushrooms with Brown Rice. You will need one cup of brown rice, one pound of shitakes, two strips of Kombu, one tablespoon of grated ginger, three tablespoons of sesame oil, one tablespoon of miso, two cloves of garlic, one tablespoon of sesame seeds and three scallions.
Let’s start of the cooking the brown rice, I got two cups of water boiling its always 1:2 ratio for brown rice. Going to add a one Kombu of strip to the boiling water for the brown rice that’s basically a dried Japanese health and its full of all kinds of good vitamins and nutrients, so pour rice in there just give it a little swell around and reduce it to the lowest possible heat this will take about 35-40 minutes.
I’ve also got three pots of water boiling back here to make our dashi, which is a simple Japanese vegetable braise. One strip of Kombu to the Dashi and a tablespoon of miso and this is what we are going to braise the mushrooms with. After about 30 minutes we are going to take out the Kombu the half will be done, and we are going to cut off in little strips and add it to our raised mushrooms. So let’s get the shitakes we are going to remove the stems from the mushrooms and cut them into nice strips, let’s grate the ginger. The good way to peel the ginger see, don’t waste too much of the actual flush part, it will take up that the side of spoon and just peel the skin off.
Right now the skins off let’s grate it, see want to get a kind of a fine grater that’s colour scallions, so we want to cut these on the bias then it looks really sexy that way for garnish. Garlic we are going slice it super thin that will end of and then put it on the flat side and as fast as you can just make nice super thin cuts. Al right, so now we got all of our ingredients prepped, I got the wok on high heat and lets take a look at our Dashi. You can see that all the miso is incorporated and look how big that piece of Kombu got are delicious and we are going to cut that up and add it back into the mushroom braise. Al right the wok is nice hot, adding our sesame oil, add shitakes and it going to sautés shitakes for about three minutes and just go adding the sliced garlic in the ginger, still it’s fragrant and then we are going to add Dashi start braising. We will let that braise for about 25-30 minutes, so the mushrooms are started braising, let just cut off this strip of Kombu we got in the Dashi. Cut it about three quarters of an inch long we tousle in the mushroom braise.
The brown rice is perfectly cooked and our Dashi braised shitake mushrooms are ready for action. The really cool thing about whole grains and legumes so any kind of beans is that you can cook them and then freeze them and make sure and want to get plenty of braise also over the rice not a soup but we wanted to be kind of wet dish.
