How to Do Dim Sum

“Kung Hei Fat Choi” or “Guo Nian koi la” Happy New Year. And we are in China Town celebrating the New Year which starts on the evening of January 25th or 26th, and it is the Year of the Ox this year. So, if you are ox, you are loyal, patient, dependable, you’re most compatible with the snake, rooster or rat, and you could become a brilliant surgeon or general or hairdresser. That’s from the book I wrote.
But what I wanted to show our Spices of Life audience is how to do dim sum. So we came to the Winsor Dim Sum Caf? in Chinatown. Usually, in a dim sum caf?, you see tarts rolling around. The wonderful thing about this caf? is that all the food is made to order. They have about 80 different types of dim sum. Dim sum is traditionally Cantonese, but here, they have northern styled dim sum and eastern styled dim sum as well as southern Chinese or Cantonese dim sums.
Step number one on how to dim sum. Order tea. And the next thing that you want to do is either look at the menu or watch the carts. Dim sum is a really broad category of food and can include dumplings, steamed breads, noodles and sweet and savory pastries. So, we’re going to show you my top 10 choices for dim sum. The first is a barbecued pork bun or a “cha siu bow”. Cha siu bow can either be steamed or baked, and these have been baked. We’ve ordered a lot of different types of dim sum, and then we’re going to just eat them.
These are xiao long bao, everybody’s favorite. Steamed soupy dumplings and they spurt when you eat them. We also have some garlic chive and shrimp steamed dumplings. We have some steamed vegetarian buns. And then, we have some noodle rolls. And these, you can have them filled with shrimp or beef. These are cha siu bow. These are barbecued pork buns but these are steamed rather than baked. And then we have har gau or steamed shrimp dumplings, another Cantonese favorite. And then they do spread out some shrimp and garlic chive fried dumplings or wantons, and fried dumplings and vegetarian spring rolls. And, any of these foods would be terrific for the Chinese New Year but the dumplings are particularly important over Chinese New Year.
So it’s standing when we’re late at the Windsor Caf? and we have to feast. So have a happy, happy new year. Guo nian koi la from Spices of Life.
