Dramatic Summertime Fruit Salad Recipe

Hi I’m Betty. Welcome to Betty’s Kitchen. Today we’re making a Summertime fruit
salad and I just want to move over here and show you that we just finished making these
strawberry-blueberry parfaits and they are perfect for 4th of July but I only used the 2
fruits and for some people I think maybe you might enjoy a mixture that has more than 2
fruits so this summertime fruit salad is going to have strawberries blueberries and also
pineapple. If you would rather do it for 4th of July leave out the pineapple and it will be
red, white, and blue so let me move these out of the way.
Strawberries, I had 2 cups which I had sprinkled with a tablespoon of Splenda. You can
use any kind of artificial sweetener that you like or sugar. This is just to keep it from
being to tart. Likewise the blueberries which come in a container like this at your grocery
store, I have 2 cups to start with and I’m going to use some of them on those parfaits but
for 2 cups I put 1 tablespoon of Splenda stirred it around so that it would be again 2 cups
of pineapple. It comes from the store like this. The can comes from the store like this.
This is already peeled and cored. It wasn’t sliced so I sliced it and cut it in to chunks that
were recently sliced. They’re about the same size as my ¼ strawberries.
Now the blueberries are smaller but that’s just the way they are. Since this is going to be
a fruit salad I have a salad bowl here and we want to put about equal portions of the
strawberries, the blueberries and the pineapple. I’m going to blend this together and it
already has about 3 tablespoons of Splenda mine is a little bit that we just used earlier and
you can just cover it right like that with plastic wrap and serve it in that form. It’s a
beautiful summertime salad.
What I’m going to show you is another option if you want to take some of the whipped
topping that I have here which didn’t use in this dish but I did use in my strawberry-
blueberry parfaits take your whip topping and then I’ll just take all of what’s left here
which looks like maybe half cup and this is frozen thawed whip topping and it happens to
be fat free.
To this add a little bit of strawberry glaze and this happens to be sugar free and that’s
why I was concerned about the sweetness of the salad. I put in just a little bit in here and
then I’m going to stir it around and I can always come back for more. I can’t take it out
but you can always come back for more. So when you get this mixed up to a blend that
you think is nice and you can leave it with a striated color like that where it’s partially red
and partially white that makes a nice topping. I think that’s good for me.
So what I’m going to do is go to my fruit salad and use a little berry though and try to get
some of each of those fruit now. Now my little dressing that I’ve made over here I would
just put a dollop on the topping then your fruit salad looks like this.
