Audra: In the mood for some Italian but you don’t feel like the hassle of going out to get
it? Well, we got the perfect solution for you. Now you can actually the Scotto
family’s famous eggplant pie anywhere in the country. And we stop by Fresco On
The Go for a little cooking lesson. Of course, the 411 on ordering the dish too.
Female: And not only should look good, but it’s got to taste good.
Anthony: You first.
Elena: Hi, I'm Elena Scotto of Fresco By Scotto restaurant.
Anthony: I'm Anthony Scotto from Fresco By Scotto restaurant.
Elena: We're brother and sister, just to get the record straight.
Anthony: I'm the younger brother.
Elena: Don’t listen to him. Anyway, we are coming to you from Pearl Street which is in
the financial district. And this is our new flagship store, Fresco On The Go. And
we are going to make eggplant and zucchini pie for you today. So let's get to
work.
Let's start with out cheese mixture, what are we putting in?
Anthony: So let's start with little egg. We beat that egg, its two eggs. We’re going to add a
little regatta cheese. This is whole milk regatta cheese. We're going to add some
parmesan cheese.
Elena: Oh yes, very cheesy.
Anthony: We're going to add some mozzarella cheese and we're going to finish with little
parsley.
So do you remember who originated this meal?
Elena: Yes, right. How could I forget. This is Kathy Lee Gifford’s favorite, favorite dish
at the restaurant.
Anthony: To this day.
Elena: Yes. And actually we created for her because she wanted eggplant parmesan. And
we just can't make anything simple, so we said no, we're going to make it with a
twist. And that’s where we came up with the eggplant and zucchini pie.
Anthony: So what I'm looking for is a consistency that when it’s melted will stay together.
So it’s got to be a little firm. And that’s what I'm looking for right now. And I
think we're there.
Elena: That looks great.
Anthony: Okay.
Elena: So let's just take our cracked plate and we’ll line it up with some tomato sauce,
mom’s homemade sauce.
Anthony: We have it sitting right here. Mom, did you taste this?
We pre-floured, egged and bread crumbed our eggplant. And then our zucchini.
Elena: And we just start layering.
Anthony: Yes, we start layering. Are you the supervisor for this meal?
Elena: Yes.
Anthony: Sorry, just checking.
Elena: I'm just making sure everything looks good. I don’t like to get my hands dirty.
Anthony: But you're okay with that.
Elena: I'm good. You're doing a great job.
Anthony: Thank you very much. Thank you.
So then we’ll going to dull up a little of the mozzarella and regatta cheese
mixture. We're going to add a little parmesan cheese. We're going to add a little
tomato sauce. And we’ll going to do it all over again. And we're going to start
again. Little parmesan cheese.
Elena: That looks very nice.
Anthony: And then finish it with the tomato sauce. And I don’t think mom would approve
this unless we added a little bit more parmesan cheese on top. And what we're
going to do with this afterwards?
Elena: Great, we're going to throw it in the oven. So just give us a few minutes and
you're going to see what it looks like after.
Anthony: Wow, nice job. You did a nice job.
Elena: Yeah, I'm ready to go. And that’s what it looks like, and it taste fantastic. You're
going to love it.
